    Nice attempt and introduction to an untried cake (for me).
    Two baker's suggestion, always make the frosting first, so it can cool in fridge while you make cake. Secondly, especially since I noticed your cake seeming to collapse a little. A) use a mixer if you have, but B) even if not, always add eggs one at a time and mix until blended before adding the next. It helps it emulsify with butter and aids in suspension of cake. Also, you never needed to double boil frosting from get-go. Otherwise, looked tasty and loved the artistic home-made fondant addition (never knew how that was made).
    In the end a great homemade cake. I'm sure Smith Island Bakers has a huge baking facility and special equipment that would be hard to replicate, plus a different recipe as some of their ingredients on site are different. Hope you make more creative and food videos. Cheers to Terry for great video work.

    A tip from a long-time baker: break each egg individually into a glass or bowl before adding them to the mixture. This way if by chance an egg has an issue, it won't ruin all the other ingredients (happened once or twice to me in the past).
    (Also, 7 is a lucky number :D)
    I guess now that you know how the store-made cake tastes like, you could tweak your recipe to try and approximate it further. A touch of saltiness could be accomplished by exchanging half of the butter for salted one (or trying to add a pinch of salt).
    The frosting is a difficult question, could be they've added cream cheese once it was cooled off, and used a mixer to achieve a more 'fluffy' consistency.
