I'm not an Indian but I have been in the community for a while due to a Bangladeshi husband, but that's not India, but the sub-continent and down to South India have their specific Biryani. I like Pakistan style too and for what I know it's not too spicy. I also believe their Biriyani is rich in ghee.
The biriyani is delicious. The spices in the seasoned rice is super flavorful. I never had the shrimp biriyani. I usually order goat biriyani with goat curry and cheese naan at my local Indian restaurant.
The shite sauce is raita. Onion Raita is a must-have condiment with an Indian meal to cut down the heat of the spices. This perfectly creamy and cooling Raita recipe makes a great dip or side dish.
The brown sauce that came with the Biryani is called Salan and the white sauce is a yogurt sauce called raita to help with the spice. I would recommend going to House of Biryanis and Kebabs in either Malvern or Norristown and trying their biryani. I would recommend one of the chicken biryanis or goat.
That chef used more shrimp in that portion of food than must chefs use in a month. He definitely hooked you up when you revealed your a TH-cam food reviewer.

My people don't use carrots but some lentil (Masoor)
Indian foods is 1 of my fav cuisines especially North Indian cuisines. Must tries for me are Briyani, Roti Naan, Butter Chicken, Black Pepper Mysore mutton, fish curry, masala chicken.
JL you should try other Caribbean food besides Jamaican food. Check for Guyanese 🇬🇾 and Trinidadian 🇹🇹 spots in Philly or Jersey. I’m from Brooklyn, NY and we have A LOT…as well as in Queens. Get you some curry chicken and roti, pholourie, doubles, bake & saltfish! You won’t regret it! Our version of Afro/Indo-Caribbean food. Trust me! You’ll love it! You see Mark was just in Trinidad 🇹🇹 I’m waiting for him to visit Guyana

You have to try Lily’s Authentic Indian Cuisine in Jenkintown PA. It’s the best! And you can ask for spice level mild to high spice. Many good food options.

obtw: a wise old Buddhist chef who ran a vegetarian Chinese food house always served his food warm rather than hot He told me that our bodies are not designed to digest hot food. Took me awhile to get with that yet once I did embrace warm rather than hot my palate became sharper and the food much more enjoyable and the spice heat was so much more delicious and hot!! Jus sayn....
I’m from the Lehigh valley my boy and they got good food for sure. Definitely try clove and especially amans artisan Indian cuisine. Get that butter chicken too with the white rice my boy!

It’s pronounced beer- yani , not birani. One more thing JL , if it’s too spicy then it’s not proper biryani. Trust me I ave travelled to Pakistan and it’s lovely if made correctly, maybe you should follow - the Halal Chef on TH-cam, very nice guy makes proper Asian dishes
