im similar to sheldon...i spoke cantonese fluently but never knew mandarin. With the help of my cantonese and speaking with my mandarin gf, i was able to learn fluent mandarin :D

He actually spoke Mandarin for all of it but we cut out a lot of his lines cause he's not an actual Chinese student and we wanted more focus on their reaction rather than a Chinese American. 💪 Can't save him from double dipping though. 😂

Everything in Texas BBQ is delicious. The meat, the sides, everything. The only issue I have is that both the meat and the sides don't really balance each other out, they are both "main character" levels of flavor. I think a better meal would be meat + rice or sides + rice, rather than meat + sides.

It's not supposed to be very hot because ideally it comes right out of the smoker < 200ish degrees or a warmer. Which is quite warm but not like eating food right off a grill (can be >500 degrees at the surface) or out of a pot of boiling soup which is more common in other types of cuisine
When he says warm he is meaning in reference to direct heat cooking. Most styles of bbq in China cook meat directly over an open flame and then eat it immediately. If you let it sit at the table for even a bit more than 10 minutes it's common to ask to have it taken back and put on the fire again to get it hot again. That's what he was joking about how they can't put it back on the smoker.
