Egg casserole. A bowlful of zucchini and yellow summer squash (several squash were used), quartered and sliced. 2 lbs ground turkey, cooked with seasonings of 2 tsp pink Himalayan sea salt, Tony Chachere to taste, cayenne pepper--just a little, white pepper to taste, smoked paprika to taste & half a soup spoonful of minced garlic. 3 onions, chopped. 1.5 dozen eggs (a combination of chicken and duck eggs): mix the eggs, add in some milk and mix again. Spray two 11 x 9 glass baking dishes: pour the egg mixture into the baking dishes, then season with Tony Chachere & pink Himalayan salt to taste. Stir into the egg mixture the onions, squash, and cooled cooked ground turkey (jalapeno peppers optional). Sprinkle a little bit of basil, parsley, and shredded cheese (can use cream cheese) on top of the casseroles. Bake in a 350-degree oven for 45 to 55 minutes. When I make this, I'm going to wing it. It'll turn out great. Homestead Heart, I think you'll help me get over my spice timidity.

Save the water you boil your egg shells in and water your plants( esp. tomato plants) with it( cooled, of course) adds calcium to them as well, ends blossom end rot
I save the shells and plant the 2"-3" under a new plant's root ball. When it gets big enough to start thinking about flowering & setting fruit, it'll have a nice strong stem, lots of flowers, & healthy fruit.

I had a friend some 20 years ago from Jamaica who came to live in the UK married and English man. She was as beautiful and as enjoyable as yourself. She taught my oldest daughter who was about 10 years old at the time how to cook. How to make dumplings and jollof rice. My daughter loved her and she loved my daughter and I loved her so much. She was a dear friend and sadly she died in her 50’s from cancer. But I watch you and I see her and it warms my heart because you remind me of her in your character and funny little looks and smiles. my husband and i just found your video ,it was so interesting as we watched three of them before being forced to go out to do our own chores.we had a farm in our younger days and did a lot of canning,we have retired and have a small garden.we are in our 80 's ,and still do some canning . it was such a pleasure to watch you and learn so much .So many things we have never heard of, canning butter was really exciting to watch, as was the pineapple ,and the wonderful squash recipe we will be eating soon.we love the way you present yourself.

We grow kale, collards, turnips, cabbage, okra, garlic, scallions, white & sweet potatoes, tomatoes, peppers, cantaloupe, watermelons, "Yes," in large pots 😊. All my herbs as well. I’m so happy to find your channel! I just did my first pressure canning day before yesterday I followed your directions to a T. I did the chicken breast and was pleasantly surprised I could add garlic powder to it. It came out beautiful and I didn’t blow my kitchen up. I also made the egg pie over at my daughters house yesterday she had way to many eggs and some zucchini that was going to go bad soon she was really impressed with the dish. You make things so simple to do. No Fear anymore! Thank you! I’m going to the store to get more meats to work on I got the canning fever 🤗

A few years ago I was able to get day old/stale bread type things at the thrift store for free. I would crumb them up whatever it was and make a bread pudding/ casserole thing with all the eggs I was getting at home. Was able to take some around to elderly neighbors in foil pans from the dollar tree. The elders loved them and I had maybe 50 cents in each one. Sis you are a blessing to me.
I made your casserole with eggs and squash, it was delicious. I tried canning the casserole, it came out good. By the way I'm from Macon I still grow and can most of my vegetables and fruits.

Smoked paprika is my favorite spice right now....I have been using it on everything...one of my faves is to take idaho potatoes and cut into wedges and sprinkle liberally while the potatoes are still wet, them toss them into my air fryer for 15/20 minutes. My daughter tosses hers in olive oil before adding spice and air frying, but I think they are fine without the oil....yummy!!

Just found your page today. We have chickens and we're always giving away eggs, but I'm gonna start freezing them! And this recipe helps give me ideas for how to cook large quantities. When I was watching the first video, my husband could hear me watching it and was sitting behind me laughing at your accent and funny commentary. Laughing in a good way. He thought it was a ton of fun listening to you talk. 😄 Didn't think I'd watch more than the first video but of course TH-cam had to tempt me with more and I gave in to the temptation! Glad I did! God bless ya for taking on the homestead lifestyle. I don't know that I could do it completely but I've got my chickens and I'll have my garden next year. Can't wait!
My mother lived through the depression, (she was the queen of frugal) and she made this without the meat. She browned the veggies in a little bacon grease, then added the eggs. She mostly cooked this on the stove top, but sometimes she cooked this slowly in the oven. Sometimes she'd put in mushrooms, in the spring, or a little tomato in the summer. If she had it, once in awhile she'd put a little cheese on the top.
My parents and grandparents survived in Ireland using anything and everything cooked to be frugal, especially for families of 12! Weren't they somethin'? I so admire them and really appreciate these homesteaders educating us and sharing the wisdom!

Thank you for providing me with information and inspiration regarding preserving food. We all need to share what info. we have and you do just that. I'm a Philadelphia resident and I am using my little bit of space in my front lawn to grow food. I have lots of pots out front and I know my neighbors think that I"m nuts but that's okay. Duck eggs have a rich, sweet flavor in my opinion. I think they make good cakes. You usually use 1 duck egg to 2 chicken eggs. That's the rule I remember from my mother.
Yes'm those duck eggs are rich. When my second grand baby was born, she was allergic to cow milk, so we ended up raising goats, and also chicken eggs, so she got duck eggs. They are the best for any kind of baking!

Ms." Heart", I truly love your videos! I also make a casserole like yours and when we can't eat any more, I freeze it in large blocks, wrap them in freezer paper, and then vacum seal the blocks. It keeps til the next spring if it doesn't all get eaten!

Yes girl! Growing our own food! Today I had a bunch of cherry tomatoes and sweet basil and okra. I sliced it all up, added some garlic and Italian cheese blend and found some elbow macaroni in the cabinet. I was out of ziti. I mixed it all up and bam! Lunch! I of course bought the cheese and noodles, but grew the veggies. Yesterday we had coconut Thai basil chicken and rice with bell peppers and green beans thrown in. Whatever I had on hand, went in the pot. That Thai basil is delicious with coconut cream. I harvested my last cucumber today. They were getting crispy in my TX heat. But I've already planted some lima beans in their place for some hearty fall soups.

You have set a fire in my house, I have already set up the rice and Walmart did not charge me, must be they do things different in Maine..lol. This week I am attempting to try the canned butter and freeze some eggs.
Great minds think alike. I had my squash and onions prepped and ready to go when your video showed up. LOL Mine won't have meat today for the simple reason that I forgot to thaw any and didn't want to open a jar. My seasonings are a little different and I will be topping it with a little cheese, bread crumbs, some french fried onions that need to be used up before they go bad, and a little italian season for an extra kick of flavor. I mix mine up in a bowl then pour it into the casserole dish. I also steam my veggies about half-way done before hand to cut down on the cooking time in the oven. It's just too hot to have the oven on for 45 minutes. Much Love

TIP: I dry my eggshells in the oven on a baking sheet instead of boiling. Then, crush and add to the garden soil.
I boil mines and then dry in oven and grind them to make eggshell powder for calcium!

Veggies are fine unpeeled. Most of the vitamins are contained right beneath the peel. On fruits too. Nutritiou, % delicious! Thank you.

I’m so happy to find your channel! I just did my first pressure canning day before yesterday I followed your directions to a T. I did the chicken breast and was pleasantly surprised I could add garlic powder to it. It came out beautiful and I didn’t blow my kitchen up. I also made the egg pie over at my daughters house yesterday she had way to many eggs and some zucchini that was going to go bad soon she was really impressed with the dish. You make things so simple to do. No Fear anymore! Thank you! I’m going to the store to get more meats to work on I got the canning fever 🤗

A few years ago I was able to get day old/stale bread type things at the thrift store for free. I would crumb them up whatever it was and make a bread pudding/ casserole thing with all the eggs I was getting at home. Was able to take some around to elderly neighbors in foil pans from the dollar tree. The elders loved them and I had maybe 50 cents in each one. Sis you are a blessing to me.

I made your casserole with eggs and squash, it was delicious. I tried canning the casserole, it came out good. By the way I'm from Macon I still grow and can most of my vegetables and fruits.

Smoked paprika is my favorite spice right now....I have been using it on everything...one of my faves is to take idaho potatoes and cut into wedges and sprinkle liberally while the potatoes are still wet, them toss them into my air fryer for 15/20 minutes. My daughter tosses hers in olive oil before adding spice and air frying, but I think they are fine without the oil....yummy!!
Not only are you the most adorable personality I've found on youtube, you are definitely one of the most informative. I'm just getting started with my small homestead & you have taught me so much. Just found your page today. We have chickens and we're always giving away eggs, but I'm gonna start freezing them! And this recipe helps give me ideas for how to cook large quantities.
When I was watching the first video, my husband could hear me watching it and was sitting behind me laughing at your accent and funny commentary. Laughing in a good way. He thought it was a ton of fun listening to you talk. 😄
Didn't think I'd watch more than the first video but of course TH-cam had to tempt me with more and I gave in to the temptation! Glad I did! God bless ya for taking on the homestead lifestyle. I don't know that I could do it completely but I've got my chickens and I'll have my garden next year. Can't wait!
My mother lived through the depression, (she was the queen of frugal) and she made this without the meat. She browned the veggies in a little bacon grease, then added the eggs. She mostly cooked this on the stove top, but sometimes she cooked this slowly in the oven. Sometimes she'd put in mushrooms, in the spring, or a little tomato in the summer. If she had it, once in awhile she'd put a little cheese on the top.
And that's how we stayed healthy. Thank you for sharing.
My parents and grandparents survived in Ireland using anything and everything cooked to be frugal, especially for families of 12! Weren't they somethin'? I so admire them and really appreciate these homesteaders educating us and sharing the wisdom!

Thank you Leadfarmer 73 for mentioning you on his vlogs, that is how I found you. I watched your canning vlogs twice already. Thank you for providing me with information and inspiration regarding preserving food. We all need to share what info. we have and you do just that. I'm a Philadelphia resident and I am using my little bit of space in my front lawn to grow food. I have lots of pots out front and I know my neighbors think that I"m nuts but that's okay. I love this new found enjoyment of gardening and thanks to you, I have ways of keeping my food longer and fresher. Thank you for that. I'll be watching! God Bless!

Duck eggs have a rich, sweet flavor in my opinion. I think they make good cakes. You usually use 1 duck egg to 2 chicken eggs. That's the rule I remember from my mother.
Yes'm those duck eggs are rich. When my second grand baby was born, she was allergic to cow milk, so we ended up raising goats, and also chicken eggs, so she got duck eggs. They are the best for any kind of baking!

They have a bigger yolk to white ratio. That's why they are "richer"

Ms." Heart", I truly love your videos! I also make a casserole like yours and when we can't eat any more, I freeze it in large blocks, wrap them in freezer paper, and then vacum seal the blocks. It keeps til the next spring if it doesn't all get eaten!

Yes girl! Growing our own food! Today I had a bunch of cherry tomatoes and sweet basil and okra. I sliced it all up, added some garlic and Italian cheese blend and found some elbow macaroni in the cabinet. I was out of ziti. I mixed it all up and bam! Lunch! I of course bought the cheese and noodles, but grew the veggies.
Yesterday we had coconut Thai basil chicken and rice with bell peppers and green beans thrown in. Whatever I had on hand, went in the pot. That Thai basil is delicious with coconut cream.
I harvested my last cucumber today. They were getting crispy in my TX heat. But I've already planted some lima beans in their place for some hearty fall soups.

Girl I wish I lived by you!!! You are sooooo fun!!!! I’m doing this tonight for dinner with a green salad!!! I’ve got lots of eggs, asparagus and onions and some raw pepper jack! I also have some organic corn chips leftover from our nachos last night......wonder if I crush those up and mix with some butter for a topping....I’d mix my cheese in. Hmmmmm gonna try this and see!

You have set a fire in my house, I have already set up the rice and Walmart did not charge me, must be they do things different in Maine..lol. This week I am attempting to try the canned butter and freeze some eggs.

Great minds think alike. I had my squash and onions prepped and ready to go when your video showed up. LOL Mine won't have meat today for the simple reason that I forgot to thaw any and didn't want to open a jar. My seasonings are a little different and I will be topping it with a little cheese, bread crumbs, some french fried onions that need to be used up before they go bad, and a little italian season for an extra kick of flavor. I mix mine up in a bowl then pour it into the casserole dish. I also steam my veggies about half-way done before hand to cut down on the cooking time in the oven. It's just too hot to have the oven on for 45 minutes. Much Love
