There Were TOO MANY Eggs

  • The longer days mean the chickens are laying really well. Which is great! Until you're drowning in eggs...

    Pound Cake Recipe:
    2 Cups sugar
    1 Cup butter
    5 Eggs
    1 tsp vanilla
    Cream together in large bowl.
    Mix together in separate bowl:
    3 Cups flour
    1 tsp baking powder
    1/4 tsp salt
    Gradually add flour mixture to butter mixture, alternating with 1 cup milk.
    Pour into greased and floured 9x5 inch pans. Bake for 1 hour at 350*.

    I haven't had a bread recipe that calls for eggs before! That would be great because we are swimming in eggs too. Pound cake is now on my list! Looks great!

      I throw eggs into almost every recipe, whether it calls for it or not! Gotta use them, and it gives it some extra protein and moisture. :)

    try freezing your excess eggs. Living Traditions Homestead did a video on how she scrambled them, poured into muffin pans to freeze, and put in bags for the freezer

    Ham fried rice is a great way to get rid of eggs too!!! LOL Pound cake sounds yummier though!

    Pound cake is nice. could preserve some eggyolks in salt for a more savory application, you grate them over salads and stuff afterwards for a taste of the rich eggy flavor. also little baked mirengues (I spelled that horribly) the size of ccokies? Egg nog… a bunch of different French sauces, home made mayonnaise... this is what comes to mind. (so like you could make a loaf of bread, and home made mayo and a tomato you grow and bam. home made tomato sandwhich :P

    I learned something stupendous. I have not ever had a good way to combine flour into the wet mixture and hence I never bake. You spoon yours in!!! I am very excited now to get our kitchen finished and bake in our shiny new stove. Thank you! Also, do you use an unbleached flour for your baking?

      Oh I'm so glad you learned a new trick! To be honest, I just do it because if I dump it I completely make a mess haha! But it combines smoothly. I do use unbleached, I've liked the King Arthur brand. :)
