Plantera feels like a pushover when you have the right arena tbh. Fly circles around it til phase 2 then keep distance and shred it with piercing weapons.
For this I made the arena next to a bulb then backed up my save data, so whenever I failed an attempt I simply reloaded it. Might be a little tedious, but it'll solve the issue of having to wait/search for bulbs. Another option is to turn off autosave after you make preparations and simply Alt+F4 if you fail an attempt, but if you die the game will automatically save regardless. It also runs the risk of corrupting your save data (although it never happened to me), but you should be fine if you make a backup.
I do this on my PS. I put my summoning item in a chest(DONT USE A SAFE OR A PIGGY BANK), turn off autosave and I save and exit. Then I go back and fight the boss, if I die, I close Terraria without saving and exiting(like ALT+F4 or pressing the X button on the terraria window)and I log back into my world. The summon item is still there but my health will be below half because I died the previous time. Not sure if it was because I was doing that, but my character got corrupted (not my world). Luckily PS+ had a backup and I could continue were I left off. Just make sure you always have a backup
I don't remember the exact dimensions, but I would say about 80x320 blocks. Just don't make the arena too big or parts of it won't be considered underground jungle, which will enrage Plantera.
For some reason Plantera doesn't just charge you like she does in my game, you're lucky you're not getting the F1 car Plantera that just sticks to you and contacts yo ahh lol
Plantera will usually pick up speed the further you try moving away from her, especially vertically. You'll notice this when I reach the edge of the arena, fly up and RoD to the other side. She'll start to slow down after getting closer. Additionally, the arena is set up without walls so that Plantera can't hook onto them, which also lowers her mobility.
