  • Sans Rival | Cake Recipe with layers of Nutty Meringue, Buttercream filling topped with Cashew Nuts
    Ingredients:
    for the Meringue
    ½ cup egg whites
    ½ tsp. cream of tartar
    6 tbsps. sugar
    2 tbsps. fresh crumbs (from air-dried bits of sliced bread)
    ¼ cup cashew bits
    for the Frosting
    ¼ cup egg yolks
    ½ cup sugar
    1 cup butter
    1 tsp. vanilla extract
    1 cup cashew nuts, toasted and coarsely chopped
    butter (softened) and flour for greasing your pans
    Makes 4 thin layers of around 6.5 inch diameter
    Note:
    Baking time may vary depending on the size and thickness of your meringue. So it's best to check if it's nicely golden brown while baking.
    If you're using small oven prepare meringue in batches or in small volume that will fit your oven capacity. Meringue can't wait and will release oils if left unattended. To maintain its volume bake it right away.
