    This looks wonderful. I'm always happy to see culantro used. I discovered it through Caribbean cuisine and searched my city until I found it in the Asian markets. Now I keep it all the time and barely use cilantro any more. I love the strong taste and aroma.

    my mom and i made this for dinner tonight. it's really delicious. we had two chunks of beef kneecap taking up a lot of space in the freezer and added them in. the broth is very flavorful and savory. this is a great recipe for cold weather. thank you, mandy!

    I have never tried this soup before, but I wanted to give it a shot after watching your video. I made this tonight and it was so so so delicious! Absolutely loved the mint in it - very refreshing. I used beef shank, beef tendon, and beef bones. It did take me 4 hours of simmering, and the tendon still wasn't done yet! I had to put it in the instant pot for 30 min. The broth came out rich and milky, and we ate it with noodles. Definitely will be making it again!

    I grew up in the mountain west reigion of the United States. I thought I knew what mountains were until I visited Yunnan. Now I KNOW what mountains are. Wow. The landscape there made the Rockies look like gentle hills.
    I can't wait to try this! More recipes from Yunnan please!

    Just finished making and eating this dish , very tasty, lots of flavour , though I only put 5 birds eye chillis in it was quite hot so I evened it out with more lime

    it's half a world away, but this style of cooking has a lot in common with Caribbean cuisine. there is an appreciation for the collagen-rich cuts of meat which gives you that almost creamy background to the soup. likewise, that bit of cartilage at the ends of the bone would be considered a special treat.
    growing up in a Caribbean family in the US was like walking between two cultures. Americans prize the big, meaty parts of most animals, but Caribbean cuisine (like most Asian cuisines i've encountered so far) understand that there is a world of flavor and texture to be had in all those end bits and internal organs.

      Honeycomb tripe has great texture too. It would be amazing after two hours of cooking in the clay pot...can’t wait to try this recipe!

    This looks delicious and I love the rustic style. The Thai influence makes me think Thai basil would be an amazing choice of herb, I think it would be a great combination with the rich beef soup!

    Hi Mandy! Nice dish with the exception of the “tripe”! My father who was Italian made tripe in a spicy tomato sauce. As you know it really doesn’t have a flavor but takes on the spices and other flavors you add to the overall dish. Its more a texture thing..which I don’t like. But you made a great dish!

    omg looks amazing! thanks again for sharing 🙏. I used to love going to a placed called Yunnan Restaurant (in San Gabriel Valley near Los Angeles), they had a display full of many different appetizers and you could pick a few to take to your table as you looked at the menu 😋 loooved their food

    I really like this recipe. I'm definitely going to do this one.

    Hi Mandy, I love your channel. I used to work in Shanghai back in the 90's. Our group would often go to a local restaurant and one of the dishes we would always get was eggplant. We were told the recipe was called "fish flavored egg plant". It was delicious with rice. I'd love to see your version, if possible.

    This feels like a hybrid between SE Asian and Chinese styles. It looks amazing. I do have the dreaded cilantro gene so I will be using basil and parsley instead. Also I do like tripe but prefer it sliced very thinly like in pho rather than in chunks like in menudo. I've thought of doing menudo so I could cut the tripe as I please. I really enjoy your channel with all the authentic regional recipes.

    In Myanmar, we have a similar soup made with beef honeycomb. I have never cooked it before, but I love eating it. It's not cooked with many herbs and we usually put lime leaf and lime juice right before we drink the soup.

    *People in my House*, wouldn't eat the Tripe and they're pretty picky about Beef being COMPLETELY without fat in soup too, so I'll remove what they don't like AFTER it's been cooked and rendered in the Broth, then I'll add the Spices and Herbs. I thought when I was watching this...yummy, I could add Noodles or even better, I have some Won Tons in the freezer from another one of Mandy's Recipes I've made...

    That’s not mint. Mint is totally different thing. That’s called sawtooth coriander. Or culantro.
