    Thank you for watching. I love sharing these local Chinese dishes that are delicious but not well known outside of China. Reluctantly, these recipes usually don't get as many views compared to those Westernized take-out dishes. This is a recipe that I grew up eating for breakfast (at least 3 times a week).       It would be great to see what you would make beyond recipes. What would Mandy make / your personal innovation? This might be getting into cooking art vs recipe design which might not be worth it -- always been curious though. I'm glad we're learning these less western popular recipes + ty!!

    I am a huge fan of pork belly, especially skin-on with the wonderful texture it gets when cooked. And I agree about rice noodles - everything made with rice flour has a bit of that fun bouncy mouthfeel. So this whole bowl of soup is just a mouthfeel extravaganza! :-D Thanks for sharing your recipe and preparation tips!

    made it last night. Instead of Chinese cooking wine, I used Japanese sake since it's what I had. Also, used udon noodles. Really yummy.

    Thank you for sharing this wonderful recipe! I adapted it to make skinless, sliced pork belly work; nothing to dehydrate and less cooking time overall, but it still turned out so tender and delicious in this fabulous broth! So good! And I wouldn't want to slurp it up with anything other than rice noodles 🤗 thanks again!

    Thank you, Mandy for your "Life Saver Tips" to "use a see-through lid" when frying the "dehydrated" pork belly and to wear "gloves" to avoid oil burn splatter. I wished I knew your tips years ago to save me from my frightening experience. I had hot oil splattering, literally everywhere, on the stove, walls, floor, nearby appliances, etc., and had a hard time cleaning that awful mess. I even got several oil "pops" on my hand/arm which then, I vowed never to make that recipe again. But since watching YOUR video, I changed my mind and will "safely" make it your way.

    Use splatter screens on top of your pan... I use 2 when the frying is strong and necessary.

    When my family went to China, we had to most amazing noodles and we've been trying to find them ever since. We were at a truck stop outside Shanghai and they were translated as "Mutton Noodles". The broth was jet black and like an oil slick with the most wonderful beefy flavour. We've been searching and searching, but can't find what it was or the real name of the dish so, if it's ringing any bells to anyone, PLEASE TELL ME! They were the best noodles I've ever had!
