I have had good results substituting kombucha for red wine, especially for deglazing. I’d choose a simple cranberry kombucha. Also I read an article about such substitutions. The author had very good results using one cup, less two tablespoons, of red wine vinegar, completing the cup with two tablespoons of sweet fruit juice - pomegranate/cranberry/apple blend.
