    Ingredients:
    - 1/2 cup oil of choice (butter, olive, avocado, canola)
    - 1/2 cup apple sauce
    - 1 cup monk fruit or granulated sweetener of choice
    - 1/2 cup packed brown sugar
    - 2 eggs
    - Zest of an orange (I didn’t have oranges so I used a lemon, citrus is citrus!)
    - 1 teaspoon vanilla extract
    - 1/2 teaspoon ground ginger
    - 1 teaspoon baking powder
    - 1/2 teaspoon salt
    - 2 cups all purpose flour or 1:1 GF flour blend @bethblends
    - 1 cup white chocolate chips
    - 3/4 cup Craisins or cranberries
    Frosting:
    - 1 cup cottage cheese @good_culture
    - 1/2-3/4 cup monk fruit or sugar of choice @zensweetlife
    - 1 tsp vanilla
    Instructions:
    1. Preheat oven to 350 and line a baking sheet with parchment paper. Set aside
    2. To a bowl combine all the wet ingredients (oil, apple sauce, sugar, eggs, vanilla, and zest).
    3. Add dry ingredients (ginger, baking powder, salt, flour) and mix until just combined.
    4. Fold in chocolate chips and cranberries.
    5. Bake for ~25-30 minutes or until a toothpick comes out mostly clean. Allow to cool completely.
    6. While that cools, make the frosting by blending cottage cheese, sugar of choice, and vanilla until smooth. Scrape down the edges of the blender in between to ensure a smooth consistency.
    7. Top the cooled bars with frosting. Option to drizzle with more cranberries. Set in the fridge for ~30 minutes. Slice then serve!
