Little flair, gets truly excited for superb quality ingredients cooked simply and has amassed what can only be considered a true vault of knowledge over the years. Any recognition he now gets in the mainstream is truly deserved.

Showing my age now, my first experience of Galtons cooking was at Miller Howe during the Tovey years. Wow, must be about 40 years ago...Jeeeeeesus.
