I have looked at this video several times now over the last three months or so primarily because I am so taken in and mesmerized by what you are doing & your cooking techniques, your spice preparation and the implements that you are using. I am a huge fan of all things curry having grown up with many Indians in Trinidad who are part of the Indian diaspora. I live in the USA now , but I am still in love with masala based dishes. I also often prepare my whole spices in a very large Thai granite mortar and pestle and I cook in a large steel round and concave dish called a DISCADA which is very similar to a TAWA but slightly more concave and made out of thicker steel. Anyway, long story short, tonight I finally took the plunge and prepared my own version of your TAWA Chickn in my kitchen using YOUR RECIPE AND VIDEO as my inspiration and jumping off point. I made a few adaptations to suit my own taste and preferences and based on what ingredients are available where I live. But the final dish was THE MOST DELICIOUS CURRY CHICKEN that I have ever tasted or prepared myself. And believe me, I have cooked a lot of curry dishes in my time! It was so intensely flavored, big and bold, the chicken was so tender and juicy it was just PERFECT! I did add some curd to the marination so that played a part in the tenderness and gave it a bit of a zing of sourness along with the lime juice. I also covered the DISCADA with a wok dome cover to ensure that the chicken was completely cooked. Thank you so very much for the inspiration! I can't wait to prepare this dish to share with loved ones and friends. This recipe is a WINNER and a KEEPER FOR SURE! CHEERS!
Are you sure about the quantities? That hardly looks like 1 Kg. chicken. I made this with 0.9 Kg. chicken, and it completely filled my 12" tawa, all the way to the rims, threatening to overflow with the fluid from the marination. Because of that, rather than 'frying' for 5 minutes after adding the chicken, I cooked on high heat for about 20 minutes, reducing the fluid until the chicken was really frying, and only then added the masala. I did use a little more ginger-garlic, as one teaspoon for 1 Kg. chicken seemed very little. I also don't like nutmeg and didn't have mace, so I substituted 2 cloves for the nutmeg and mace. And I chopped the green chillies fine rather than breaking them in half, since that is how I like mirchi in my dishes. Other than that, I followed almost exactly as shown... and I must say it was pretty delicious. Oh, I also used an electric grinder to grind the masalas, as I'm sure many will. And I didn't de-seed the tomatoes - don't like waste, and the result was fine, with no need to add water.
Don't forget to wash your hands after crushing green chilli.......... And how could you able to grind that masala ingredients into smooth powder with pestle...?? Pure traditional....I love this...

I disagree. If you have a large granite mortar and a pestle that is large and heavy enough for the job and you have some patience and commitment and dedication to what you are doing, it is VERY POSSIBLE and DOABLE! I have done it often myself in a large Thai granite mortar and pestle.
