I truly feel that being blind and learning an instrument automatically keeps you more honest to mentally learning your craft and overall muscle memory versus using your sight for help. When I practice closing my eyes while playing it's a different ball game 😂

Thank you for asking.
It's called the inverted pedal technique and it's commonly used on the organ and other keyboard instrument like the piano as well.
In this technique, chords are repeated over the same melody note.
Jeremy Jeffers switched to Eb major and he used the third tone of the scale (and if you know your Eb major scale, you know it's G).
He played a variety of chords over with the G on top. You'll definitely hear that the melody didn't change but underneath the consistent melody note (which is G) is a variety of chords.
Here's a classic 2-5-1 progression using the same inverted pedal technique:
2-chord | F-A-C-E over D-bass
5-chord | F-Ab-b-E over G-bass
1-chord | G-B-D-E over C-bass
In all three chords, you can see that the E is the highest-sounding note.
So, E is the pedal note here.
Side note: Any tone (in or out of the key) can be used as an inverted pedal tone and it's all at the discretion of the musician.
Change this to 5-chord | F-Ab-B-E over G-bass
