It is an ancient recipe for making Khanom Krok that is over a hundred years old and uses a charcoal fire. It is a shop that has been famous for a long time. If it were a general store, it would be in a modern style. There will be many toppings such as potatoes, taro, and corn. But here it is an ancient recipe and there will only be spring onions as the topping. This is traditional.😊
If you have ever seen another shop making Khanom Krok. You will see that they closed the large lid covering the entire stove. And will unwrap the snacks into one large sheet and then cut them apart one by one. But in the old days it was traditional from what you see at this shop. A small lid made of clay will be used to cover each one. And use a spoon to scoop out each dessert one by one. This is 100% original. This cooking method and recipe is hundreds of years old, passed down from generation to generation. This lady has been doing it for over 50 years.
When you're tasting. Auntie said "I intend to make it delicious". Because general stores will definitely make them one by one and pick the snacks out of the holes one by one for you. This shop has been featured on many TV shows and has people try their hand at picking snacks out of holes one by one. Not everyone can do it because it will be messy. It's very difficult. Authentic khanom krok won't make the outside too crispy and hard. It will be slightly charred like what you've eaten here. Inside will be lava. And this dessert must be eaten only while it is still hot to be the most delicious.

The way Grand ma / Khun-Yaai (คุณยาย) made which is put one by one covered by earthenware lid and charcoal stove ,they will slowly heat from inside then equal , after heat properly ,she will pour mixed kra-ti (coconut milk+ palm sugar+a little bit salt) then wait for outer crispy and soft inside kanom-krok , so no need to put any toppings like another Kanom-krok modern style. The original Kanom Buerng in salty flavour the stuff originally used real dried shrimps but nowadays its used shredded coconut instead. And the sugar that coated underneath is transparent not white fluffy sugar that used in the present.

The pink is Tub Tim, which translates to red ruby, I think. It's water chestunuts, and they coat it in tapioca starch. The tapioca starch is dyed with a touch of red food colour. When they boil it, the starch takes on a gelatinous texture. I love it a lot! And the green stuff is sago. In england, it's the main gelatinous ingredient in Tapioca pudding.
