A tip from Alton Brown; after you peel and cut the potatoes, put them in cold water and set in the refrigerator for a few hours. The starch will rise to the top and you can skim all the starch out of the water. The potatoes will always be fluffy!!!
The first time I ever made mashed potatoes was a couple of years ago, and I followed John's older garlic mashed potatoes recipe. It was sooooo good. I added cheddar cheese in mine to make it extra comforting. And I'm not ashamed to say, I ate the whole thing myself, albeit in two sittings. I rarely eat mashed potatoes so I didn't mind the indulgence😊

My dad was one of ten kids so box mashed potatoes was what he was raised with. My mom always made mashed potatoes with texture to assure him they were the real thing. This looks delicious! I especially like the way to showed us how to get all the excess moisture out.

I love that...' live in a house of texture issues'. I felt that. Have trouble with eating a lot of things like cottage cheese for instance. Same as for tomatoes - love the tomato sauces but hate tomato chunks in anything and certainly never sliced. I know I am missing out on a lot, but I'm too old to change. It is enough for me to eat these same foods in a different 'texture'.
I'm the same way, for a totally different reason - 40+ year survivor of childhood cancer dealing with late-term effects from treatment - many of those 'textures' are choking hazards now

Omg I had this on once in my life at a very expensive restaurant in California, husband had a voucher for that restaurant, since it was mother's day, I took mom, even as expensive as that Italian restaurant was, we ordered loads of food and a garlic pizza to take home. Looks fabulous!!! I might mention one additional step that I discovered quite by accident when I dropped a pan of raw potato pieces on the floor before boiling them. I had to thoroughly rinse the potatoes before adding water to cook. As a result of that rinse, the excess starch was removed from the cut sides, and the typical gray scum did not form on the surface of the water as the potatoes boiled! I've been rinsing my potato pieces ever since! 😄
In Denmark we have a dish that's mashed potatoes topped with bacon and caramelized onions. It's called "brændende kærlighed" which means burning love :) Thanks as always for a great recipe ;)
My son loves potatoes and always has, mashed are his favorite and also his daughters favorite. We enjoy garlic mashed potatoes and I also love mashed potatoes with horseradish! It’s the bomb. A great little club in Dallas served rare roast beef and horseradish mashed potatoes at their happy hour from time to time. Pure comfort food. By the way John, at holidays I generally peel and prepare at least ten pounds of potatoes, if we have guest then I will make even more! Talk about KP!

Sounds like you are a smooth, no chunks mashed potato fan. I am as well and I tell you, once I got a potato ricer, I never went back. You can get the smoothest mashed potatoes ever and only need to give them a brief stir after ricing and adding the milk and butter. Enjoy!
Thanks for the video. I learned a few things about mashed potatoes. The re-heating tip was interesting and I didn't know you could freeze them. BTW, I sous vide my potoes with garlic and cream in the vacuum sealed bag and mash them with my hand before i open the sealed bag. Please try it, it is delicious.
A word to the wise - something I just discovered this year. Get yourself a potato ricer! You don’t have to peel the potatoes - I just cut them up into quarters, steam them until Fork tender,, and press them through the ricer with the skin on, and they come out beautifully fluffy, and magically self-peeled! Best mashed potatoes ever! 👍

May I make a suggestion: I found if you add 4 to 8 ounces of cream cheese (room temperature) to the mashed mixture, they taste like fresh, just mashed potatoes, after either refrigerating or freezing. It my family’s secret to a pot load of mashed potatoes staying delicious until the Thanksgiving turkey is gone. Yum!
I have a peeler just like his. It was my grandma's and it's the only peeler I use. I have tried others but my grandma's works the best and it's never needed sharpening!

I prepare a bag of jumbo russets. I would mash them and put them on a lined cookie pan. Spray with non stick spray. Use a serving spoon to make a single portion. After they were frozen I would put them in a gallon zip bag and use as needed. The last 6 yrs I had gastritis and IBS. And mashed potatoes were one of the foods I could tolerate. I would boil chicken, use the broth for gravy, and pour it over the mashed. BTW I did figure out the cause of my gastritis and IBS . I'm great now.😊

At least I didn’t do it without permission. @ no. Starchy potatoes equal gummy potatoes. And red potatoes taste different than other types of potatoes. So. It's just preference.

There is no excess moisture if you boil the potatoes whole and peel them after they are cooked.

With Yukon Gold potatoes, I always leave the skins on. I also like some lumps🥔
Same…my daughter got angry with me because one time I made them and there were no lumps. So I make sure to leave some lumps just for her!😂

Australian measurements = 1 cup is 250 mls, 3/4 cup Is 180 mils 2/3 cup is 160, 1/2 cup is 125 mls, 1/3 cup is 80 mls 1/4 cup is 60 mls.
FYI these potato varieties are not available in Europe, which does not prevent us from eating delicious purée de pommes de terre.
In addition to all that, I add a cup or two of parmesan, 1/3 cup or so of chopped parsley, and a tbsp of chili powder.
Butter is the 1st step alone step 2 add cream or milk It's important to thoroughly mix the butter by itself before cream or milk
