Hi chef from Algeria. I recommend to cook potatoes and garlic and salt on steam and then replace the butter with olive oil and add camembert. If you don't use garlic then add melted cheese instead of camembert. I love your channel
1. Yukon gold potatoes 2.Garlic smashed (4-5 ) 3.Add cold water and boil together 4.Water 1-2 inches higher 5.2 teaspoons of salt 6.Boil for around 10-15 min until fork tender 7. Drain potatoes 8. Add back on low heat 9. 3-4 tbsp of butter 10. 1 cup of milk 11. Melt them and slowly pour them 12. Mash them together DO NOT OVERDO
As an Indian, I am not used to foreign dishes. But after watching your videos, I started cooking those; my family loves them. Thank you so much for your amazing recipes and precise explanation
Oh my gosh!! I am almost 71 yrs old. I have been mashing potatoes for alot of years-- now I understand why sometimes they are mushy and not creamy--- and-- I can't wait to try cooking them with garlic- I am so excited. I have lost count of all the things I have learned from watching you. Where did you get the ricer- that looks so convenient and would give me the texture I just can't get with a masher.
I suggest you get one of those measuring cups graduated in all sorts of units. I'm a metric boy by all means but if you give me a recipe in cups, I'm gonna measure everything in cups without a second thought
This was such an informative, helpful video. Thank you for explaining each step thoroughly and the reason for why I need to take certain steps. I'm making mashed potatoes for my family gathering this weekend and didn't want to mess up the potatoes lol.
This is my exact mashed potatoes recipe that I’ve trusted for years because I’ve researched it down to a science. You are more than just a talented chef, but a well respected chef because of the meticulous consideration you put into all the details of each dish you craft to ensure a consistent final product for anyone following along. Your precision does not go unnoticed and I thoroughly appreciate the explanation you provide behind taking each additional step, cooking is definitely a calculated science where the final product is a direct result from the usage of knowledge and technique. I especially love adding roasted garlic when I mash the potatoes. For extra creaminess I add a couple of tablespoons of cream cheese too, it's a-ma-zing!
It’s very difficult finding good sources cream here so , the labneh sounds like a good substitute . I also add roasted garlic and it really adds wonderful flavor but never tried cream cheese and it sound like it would be wonderful
Yes, roasted garlic for the win! I've never used cream cheese in my mashed potatoes, but I have used a dollop of sour cream and WOW they are delicious 😋
Thank you, John for your channel. I have been sick for a couple of weeks with bronchitis. Your soothing voice is helping me rest and heal. It must be a great comfort to your boys when they are feeling poorly. Thank you, again 💚

I'm not a native English speaker, but I can hear you clearly and your intonation when you speak makes me feel comfortable when I listen to you. Your explanation is simple and easy to follow. Thank you!
One of the most delicious of comfort foods, and probably the easiest to make. John, your method is fantastic; the way I make mine...but what I love most is your explanations as to why we do this to that. You blow me away.
When I add garlic to my mashed potatoes I prefer to roast and entire bulb of it. I simply place the bulb of garlic on a piece of foil, drizzle a bit of olive oil on top along with a dash of pepper, then pinch the foil closed and bake for 30 - 40 minutes. When its done it is so soft n creamy, then I mash it into the potatoes. Absolutely divine!
Good luck! I got mine out last year late (mid 30s, for the longest time my lower ones were still covered by bone so they would have had to break that to get them out). Yogurt is a good pick as well, but not anything that has little seeds, as they can get into the healing spots. Also soup you don't have to chew, so either broth or potato soup or tomato soup are all good choices. Two things they didn't warn me about that both happened to me. 1. My jaw muscles seized up afterwards from being forced open so long during the extraction, and I could barely open my mouth at first. They'll relax and slowly loosen up over several days, it just makes chewing difficult when you're ready for something more substantial. 2. If they have to do anything more than yanking them out, there may be little bone shards left behind. They'll eventually work their way to the surface a few months later after you've healed and come out on their own. Doesn't hurt, but it was a bit of a WTF moment when it happened until I googled it.
Alright. I tried the recipe today! It was delicious! But words of caution! Please, take out the garlic before you mash the potatoes up. For those who don't want garlic bits ending up in their mashed potatoes. Also, if you want your mashed potatoes creamy, just blend them either in a blender or food processor. I used my food processor, and it's nice and smooth, no lumps! Also, I used 1 cup of milk, because I felt 3/4 was too little for this big batch of potatoes. Again, thank you so much for this recipe! It will now be my go to recipe!
@Miss Raex I took your advice on blending the potatoes in the food processor and omg such a great idea!! I even left the garlic in there and it tasted amazing! I even did 1 cup of milk as well and it turned out awesome! Thank you!
Great recipe with options for different textures and flavors, and better yet, you explain the WHY for doing so many things which helps us home cooks learn more! Thank you!
Being Irish we are the masters of potatoes (we have them 6/7 days a week) but I am intrigued with your idea to add garlic to the boiling process and I would love to try this. One question did you remove the garlic after straining before starting the mashing or did you mash it right in?
That's what I wanted to know. He doesn't mention fishing the garlic cloves out afterwards either in the video or in the written recipe. I've seen other people's recipes where they too have used garlic cloves in the boiling process and they've mashed them along with the potatoes.
