Your up close footage of waders feeding on the mud are not in fact Knot Steve but, Dunlin. Dunlin are a smaller wader with a stockier build and a distinctive downcurved tip to their bills. Your aerials are classic Knot, Dunlin fly much lower and a lot faster twisting and turning on a sixpence as they skim across the mudflats. Just returned from Snettisham myself - it really is a wonderful experience. Keep up the good work.
