Over 30 years ago my grandparents used to take me vegan restaurants that would blow people's mind. A spread full of leafy vegetables, roots, etc. Korea had a strong Buddhist community at one point, and as a result finding vegan restaurants were common. In fact, it used to be considered gross to have so much meat that's common nowadays in kbbq places. Those places are mostly gone these days. Would love to find a similar restaurant in Seoul or Busan my next trip

Question. I have seen regular Kimchi and Radish Kimchi. What is the difference in Texture? I know how they make the kimchi and seasonings, not every kimchi will taste the same, but just curious on texture. I like soft textures mostly.
