  • Join Jack in The Cornish Fishmonger's Kitchen, as he shows us how to dress one of our cooked Cornish Crabs.
    Cornish Crabs are delivered to us daily from small dayboats on both the North and South coasts of Cornwall. A dressed crab is a meal in itself, marrying the strong taste of the brown meat with the sweet exquisite flavour of the white. We think it's best served with a nice big bit of white bread and butter!

    My mother used to use a knitting needle to get every single scrap of white meat out 😂

    There’s a small ball on the knuckle joint on the claw you need to remove with a knife to separate the claw and knuckle. It’s almost impossible to do by hand!

    I am surprised that you did not remove and dispose of the crabs' stomach.

      The gills and membrane are the best part.
      The brown meat taste what a 30 year railroad bums mouth would taste like.

      @@oldironsides4107 By "best part" you mean the part that everyone throws away? I don't believe even our Asian friends eat the gills. I know some people like the "crab butter" the hepatopancreas, but yeah this fellow was eating everything from the esophagus to the poop-chute. Kinda gross. I wouldn't eat that mush unless near death from starvation.

    Yeah, the so called "brownmeat" is the hepatopancreas and ovaries. So not really "meat" but glands and other offal.
