for those cutting toward their chest: keep the POINT of the knife away from you, and keep your wrist torqued so your thumb points straight ahead, not to the other side. This puts the meat of the base of your thumb between your knife and you and makes it impossible to cut yourself. (Mors is already doing this). What brand of knife are you using to carve with? I have never seen carving knifes like those.
It is a Mora Knife, the Erickson style.
