I’m 76 and been making no knead breads for 16 years, then sourdough Artisan breads for about 10 years. I created my own starter and it’s that old, 10 yrs. I just made sourdough Focaccia today. Now I’ll watch the video and try to give some tips but I’m sure your helper has it! I watched some of it and we do it differently. I only make 1 loaf for 2 of us. 500g flour, 375g water. 50-70g starter, 1 1/2 tsp salt. I mix in the evening, ferment overnight on the counter, shape, proof and bake in the morning. I add starter to the water, mix, add flour then salt. Mix well with spatula. Do 3 stretch & folds 30 mins apart. Bulk ferment overnight, bake in the morning.

Papa and Nanna the next time you get to stay in a hotel take the disposal shower caps home with you, they make great tops for the bread basket when the bread is proofing.
I was taught by my Grandmother to never use a metal bowl for sourdough. Sourdough is acidic, metal can affect the outcome. I use earthenware or ceramic bowls. I hope this helps♥️
Oh my goodness, you & your Dad look SO much alike- I'm sure you've NEVER heard that before, right?! Bread flour might be good for sourdough, since the higher protein content (slightly) makes for a bit chewier, more structured bread. Makes sense to my non-bread-making-or-eating brain=) We gave up bread, rice, pasta & potatoes a few yrs ago~ such a huge difference it's made for us.=) I still enjoy watching people make bread however, as there's something so soothing & productive about it. Plus, I'm fairly certain that if I had all my metabolically healthy children still at home, I'd be making bread as well~ especially sourdough! One of the healthiest breads to be eating for sure.

I confused the commercial about the book cut off part of the video. The dough was in the bowl when it went to commercial and after the commercial it was laying on the counter so you don’t do anything once it rest but put it in a ball. You don’t have to pull it anymore or flour the surface or anything?
I make my sourdough with that exact bread flour and it works amazingly! My starter has been (over)active. Now I’m wondering what the supposed problem is? (There are times I use King Arthur all purpose as well)

Yes - - - she just folded a few times and then put it in the basket. Made sure there was a nice 'tension' on the top. Then put it in the basket with the top side down
You know I love you, right? Papa, your kneading skills need work, watch your beautiful daughter, pull towards, push away, with whole hand, not just your fingers. Trust me if I learned to bake delicious bread w/o scale, bread machine, etc., the old school way, a big bowl, spoon, hands, anyone can. I know you will succeed, just keep on doing it. Okayyyy I am to the point that I cannot keep another “thing” alive 😂 I have my mother in laws son, two corgis, fermented vegetables, kombucha, Kefir, and lord knows what else 😅 I am now struggling to keep myself alive 😂 Sourdough will have to wait until another decade 🙃🙃🙃 it’s the mother in laws child that is challenging me At this point 😅

I use King Arthur flour for all my baking. I think cookies and things turn out better with that flour.
