Oven Grilled Liver Skewers - Simple and Delicious Calf's Liver Kebab

- Liver skewers or kebabs are so popular in Turkey, people eat them for breakfast in many Turkish cities. Traditionally liver kebabs are made from lamb's liver and grilled on charcoal.
Today we are making an easy version of liver kebabs with calf's liver and using the kitchen oven to grill them. Incredibly delicious and one of the best versions of calf's liver.
Serve with an onion, parsley and sumac, this simple and quick to make kebab will definitely surprise you!
I will also make the more common and traditional lamb liver kebab in the future, which also follows a very similar recipe.

Ingredients:
• 500 g, calf’s liver
• 150 g lamb fat (preferably rib fat)
• 2 tsp cumin
• 2 tsp chili flakes
• 1 tsp sumac
• 2 tsp paprika powder
Garnish:
• ½ onion
• 1 tomato (thinly sliced)
• Chopped parsley (1/2 cup)
• 1 tsp sumak
• Lavash bread

This is a great way of cooking liver. With it's lack of fat, liver usually turns out dry, but the way you flanked the pieces of liver using lamb fat offsets that nicely :)

Never dry if you have the pan ripping hot. Fry for a minute on both sides in butter.
I made this. It is delicious. I was able to get two large bags of lamb fat for 4 dollars and a beef liver for 5 dollars.
Used the same spices. Added a little splash of dark soy sauce. I baked it in my toaster oven on the middle rack at 350 for somewhere between 30 and 40 minutes turning then every 10mins.
They microwave well the next day.
Good keto recipe too.
People in the USA get a little squeamish with livers sometimes, but they are missing out. I've had these before - prepped very similarly to how you did them - and they are delicious!

I love sumac and lamb together - I never thought of using lamb fat and sumac to prepare liver - that must have been delicious! They certainly look (and sound) amazing!

If you ask a local butcher that sells lamb, I think they could give you the trimmed fat from the lamb ribs.

it's great but How long should it be in the oven to grill completely ??
About 15 minutes, but really you need to keep an eye and rotate as it changes depending on the oven.

Try Turkish butchers, they should have it. Worst case, you can buy some lamb ribs and trim the fat.

About 10 - 15 minutes in total with upper grill. Remember to check them occasionally and rotate.

Can beef fat be a substitute of lamb fat?
We dont use beef fat for such recipes, we only use it for slow cooked dishes such as braising or oven cooking, but no harm in trying.
What if i use beef fat?
