Looks yummy. I too am a spice wimp. Prefer a sweet chili with some ketchup and chili sauce (Heinz of course) and I add dark red kidney beans to mine. I WILL give adding the stew meat tip a try in my next batch. Sounds like extra beefy goodness. BTW, that beef base paste is the bomb in any cow meat recipe.
Chili is one of those foods I for some reason make a batch big enough to feed ten adults. I really should invite guests over when I make it but turns out I don't really like people.
My wife is also spicy hesitant, 1/4 teaspoon cayenne would be too much for her. I see this recipe calls for 3/4 teaspoon of cayenne, that might be too much for me and I like spice. When I make chili now, I just wave the unopened cayenne over the chili, so my wife can eat it. I can always add cayenne to my own bowl.
Like most things Disney, this dish is actually a little bit of revisionist history and a little bit of myth-making. Walt’s favourite chilli was a can of Dennison’s brand mixed with a can of Hormel. It was such a staple in his life he travelled with it. It does seem he was a bit of a chilli connoisseur, but he didn’t seem to like it too fancy. It’s neat to have some of his favourite foods at the park, that’s a nice nod to its founder.

I would suggest a small modification to the recipe. After you brown the stew meat, brown the hamburger and pour off some of the fat, leaving enough for the veggies. That way you're not dumping a lot of flavor from the onions, green pepper, and garlic.

At least with this recipe you can easily omit them. Also, the recipe is called Chili and Beans... so I guess technically it's chili before the beans.

It was so good with the big chuncks of meat. I did cut our stew meat peices in half. They seemed a little too big
I would have to cut way back on the spice/heat, but that does sound yummy!
