Thank you for talking about not filling a frozen cake! I did this for the first time a few months ago and after a while my frosting started acting crazy!! I was a total newb so I had no idea what was happening, but months later I realized it was water mixing in with the frosting from the condensation!! After watching this video I realized that's what had happened and now I never do it!!

Hi Karolyn! I was just wondering, I love your doctored cake mix recipe. Have made it several times your way, however this time I made a scratch red velvet cake; but continued with your freezing wrapped cakes. I'm not sure what the minimum time in the freezer can work? Watching this video, I was thinking 3-4 hours? Am I on the correct thought process? Usually I just leave them overnight, but this time I'm in a slight rush. Thank you for all you've taught this 69 year old on how to bake cakes.
Hi Mindy! I have been in this situation before and have frozen them for about 3-4 hours, like you said. It's enough to get it pretty solid and trap in the moisture. If you're really in a rush, you can wrap them up and skip the freezer. Especially if the cake will be eaten within a day or two!
How did I not find you before this? Omg you are so helpful!! Your cake layers look so nice and thick. I love it. And I will definitely be buying you coffees 😊
What about when you do a crumb coat? Can you frost the cake when you take it out of the fridge or freezer right away or should I let it sit before doing the final coat?
I crumb coat the cake, put it in the fridge for at least 4 hours so the icing can harden, then remove it from the fridge and immediately add the final coat. I never freeze a crumb coated cake, you could have condensation issues if you do!
While searching on how to make a cocomelon cake, i felt on one of your videos and have fallen in love with your tutorials, it has taken my Cakes to another level , thanks so much 👌🙏🏽

Thanks Karolyn I appreciate you so much! I keep coming back to your videos time after time. I have a question: Can I freeze a fully decorated cake (American buttercream) until the day of the party (about 3 days)?
Hi! If it's only 3 days, I would just keep it in the fridge. I've had cakes in the fridge up to a week and they have been fine! If they are moist to begin with, they will stay moist in the fridge. If you prefer to freeze it, you definitely can. Wrap really well in plastic wrap and freeze. The day before the party, remove from the freezer and put in the fridge (still wrapped in plastic wrap) so it can start slowly thawing. Then remove from the fridge and bring it into a cool air conditioned room to prevent condensation from forming!

I was taught that way to let it stay in the fridge to go through condensation phase after icing it frozen and once I take my cake out the fridge it would still look sweaty. Oh no! It sucks when we get that feedback, it happens to all of us. If the cake was dry, it was most likely over baked. I frequently have frosted cakes in my fridge for 5 days without issue. The cake won't dry out in a few days if it's moist.
Hello! I’m new to your channel and I’m loving all your videos I’ve watched. I have a question after taking the cakes out of the freezer, how long does it take to thaw?
It depends on the size. Smaller ones take about 1-2 hours, larger ones up to 4 hours. On the days I thaw my cakes and fill them, I will take them out of the freezer around 7am and start filling around 11am.
Hi Karolyn! Quick question. Soooo I’ve had some layers in the freezer like two weeks now double wrapped in plastic wrap; do you think they’d still be fresh enough for an order this week?? I’m only asking cause I know some people say if you’re going to freeze longer than a few days I should double wrap them in Saran Wrap and maybe wrap in foil and put in a freezer bag.
This explains why my darn buttercream just instantly freezes as I’m icing the cake ! Lord help me ! Thank you so much. Should’ve looked this up sooner !!!! Lol
Hey Karolyn, I would like to ask how long you would keep the cake in the freezer? Is it OK to keep it in the freezer for a week? Will it still be moist?
I keep it in there overnight. But you can definitely freeze longer! I would double-wrap in plastic if I were to keep it in there for a week. It will still be moist!
Very informative video thank u. I have a question: Can u store decorated cake( 6 inch three layer buttercream filled rosette cake) in the same cake box you will be delivering in? Do u take it out of fridge a few hours before heading to delivery? (I love in TX so right now it is soooo hot here🥵)
I personally store my cakes in the same box I deliver it without any issues. Even on the hottest days. I keep it in the fridge until I'm ready to deliver it. But I cool my car down for 10 minutes or so before I put the cake in there! I wouldn't want to deliver a cake that has sat out too long because the icing will get soft and the structure will be compromised.
So I come back Sunday morning like 10am and we need the cake ready for an event at 3pm. I was going to bake the cake Friday night and freeze it but it seems I need 6 hrs for it to thaw 😭 I need another solution. Should I just try to back and decorate and do everything Sunday ??? I remember you say don’t refrigerate them they have to be frozen to store them?
I would just bake them and wrap them in plastic wrap while they cool. Don't freeze it, just leave it at room temp to cool wrapped in the plastic wrap. That will help trap in the moisture!
Hey girl, thank you! Yes, I spray a little on my layers. I don't saturate it like I have seen in other videos! Here's a video I made: th-cam.com/video/VPzwq0CzIb8/w-d-xo.html
Depends on the size! I give the larger sizes (9" and above) approx. 4 hours to completely thaw. The smaller sizes need 2-3 hours, depending on how hot it is around you.
I only keep them in the freezer up to 24 hours. If you want to freeze them longer, double or triple wrap them in plastic wrap and you can also wrap with aluminum foil over the plastic wrap as well.
I torte, fill and crumb coat while frozen. Structure and less crumbs everywhere. It’s my personal preference. But I don’t do anything fondant. It’s either whipped cream or buttercream. Haven’t had a problem.
I have been frosting/filling all my cakes while frozen for the past 3 years and haven't had any issues (knock on wood). I've just had really good results doing it this way. I do keep the finished cake in the fridge (usually overnight) and until delivery so it can slowly thaw without the condensation issue. So far, no negative feedback from customers.
I always lightly spray each layer after they are completely thawed, before I fill the cakes. I show how in this video: th-cam.com/video/VPzwq0CzIb8/w-d-xo.html
I have a buttercream that I'm using for first time its half shortening half butter powdered sugar and only 2tablespoons heavy whipping cream. Do u think that it can sit out overnight to set or should I do the dish on top for 2hrs then refrigerate?
I would always recommend to just refrigerate it when it has to sit out for more than a few hours. It just eliminates any possibility of something spoiling. I'm sure it would be okay if you didn't do it though.
I prefer to thaw at room temperature. If you thaw in the fridge, they will still be cold when you take them out. I personally don't like to fill cold cakes. But if you like to do that, then you can thaw in the fridge.
I like to thaw them completely just to reduce the chance of any issues. If you frost a frozen cake, you could have issues with condensation and / or blowouts. If I had an urgent order, I would bake the cake and let it cool without freezing it, then I would fill and frost it.

I’ve only gotten that question a few times. But I’m always honest. Most of my customers know I use a doctored mix recipe for my cakes (because I put it out there on YT). And I’m not ashamed of it. I also have two fridges with freezers that I use just for my cakes, so I have a lot of space to spread them out!

Oh no! It sucks when we get that feedback, it happens to all of us.
If the cake was dry, it was most likely over baked. I frequently have frosted cakes in my fridge for 5 days without issue. The cake won't dry out in a few days if it's moist.
Hi for how long can you keep them in the freezer? thank you
I would say about 3-4 months tops. If you freeze them for longer than a week, I recommend double or triple wrapping them in the plastic wrap!
Good grief! How many cakes were those for? 😮 Just looking at them gave me heart palpitations!
I can't remember, that was a really busy week though!
I think they should be fine! I've used cakes that were only single wrapped in plastic that were in the freezer for 3 weeks with no problem.
Very informative, thank you, so do you freeze them again after filling them?
Nope! After being filled, they sit at room temp until I frost them 😊
Hello. When do you put sugar syrup? Before or after freezing?
Always after I thaw them from the freezer. Once I unwrap them and level them, I will spray the simple syrup on each layer as I fill the cake. 😊
Hey Karolyn. Your NJ Girl💜 I heard you mention a wedding bouquet flavored cake. Is that mads with an extract? Thank you in advance. 😊
Yes! I have briefly mentioned it in my 10 flavors from 1 mix video. You can get it at weddingbouquetflavor . com. It’s AMAZING!
@@KarolynsKakes Thank you for sharing 💜
Hey a dupe for wedding bouquet is princess cakes and cookies emulsion by Loranns
You should try just one stand up freezer save space , especially if your not using the frig part
Hi how long do you leave the cakes in the pan after taking them out and wrapping them?
About 3-5 minutes 😊
Do you have a vanilla or white cake recipe? ❤

This explains why my darn buttercream just instantly freezes as I’m icing the cake ! Lord help me ! Thank you so much. Should’ve looked this up sooner !!!! Lol
OMG yeah that sounds like a nightmare! You can't do squat with hard icing!😂😂
Thank you for sharing!
Very informative video thank u.
I have a question:
Can u store decorated cake( 6 inch three layer buttercream filled rosette cake) in the same cake box you will be delivering in?
Do u take it out of fridge a few hours before heading to delivery?
(I love in TX so right now it is soooo hot here🥵)
I personally store my cakes in the same box I deliver it without any issues. Even on the hottest days. I keep it in the fridge until I'm ready to deliver it. But I cool my car down for 10 minutes or so before I put the cake in there! I wouldn't want to deliver a cake that has sat out too long because the icing will get soft and the structure will be compromised.
Thank you so much. So informative!!!
Glad it was helpful!
I love this ! Thank you !!
I love the cake board idea! Your cakes look very moist, do you ever use sugar water before you fill? Thank you!
Hey girl, thank you! Yes, I spray a little on my layers. I don't saturate it like I have seen in other videos! Here's a video I made:
th-cam.com/video/VPzwq0CzIb8/w-d-xo.html
What is the minimum amount of time that a cake (layer) would take to fully thaw?? 🤔
Depends on the size! I give the larger sizes (9" and above) approx. 4 hours to completely thaw. The smaller sizes need 2-3 hours, depending on how hot it is around you.
@@KarolynsKakes thank you!!!!
How do you prevent cakes from becoming freezer burnt?
I only keep them in the freezer up to 24 hours. If you want to freeze them longer, double or triple wrap them in plastic wrap and you can also wrap with aluminum foil over the plastic wrap as well.
Do you keep decorated fondant cake in the fridge without it sweating
All the time! Here's a video explaining how:
th-cam.com/video/vBKi-O7v98w/w-d-xo.html
I hear a lot of other bakers say fill and crumb coat while frozen🥴 I wonder what their reasoning is? Your explanation makes sense to me
That makes me so nervous!
How long do u let them thaw
About 3-4 hours depending on the size and how hot it is outside. I want them to be completely thawed (to room temp) before I fill them!
Thank you for this 😅
Thanks Karolyn are all the cakes you make from scratch or are they pre mix?
My decorated cakes are doctored mix cakes. My pound cakes are from scratch!
Can i melt the cake on the oven ??
I'm sorry, but I'm not sure what you're asking?
What is wedding bouquet?
One of the most amazing flavorings ever! I'll do a video on it ASAP!
Can you refreeze after defrosting?
I’ve done that before with no issues. (Thawed completely wrapped and never took the plastic off and just put it back in the freezer.)
Will it make it more moist if I add sugar syrup while frosting ? Or can I skip that part since cake is already moist plz let me know
I always lightly spray each layer after they are completely thawed, before I fill the cakes.
I show how in this video:

Karolyn, I make an oil based chocolate cup cake recipe. I have noticed that I get oil marks on my boxes. Is this normal? Do you like your cake boxes?
Yeah that can happen. There is oil in it! These boxes are okay, I usually get whatever they have at the local restaurant store.
@@KarolynsKakes that was supposed to say... Do you line your cake boxes with parchment? 🙃 sorry
Hi do you take the plastic wrap off to dethaw
No, I leave it completely wrapped to thaw so it doesn't dry out!
I'm sure it would be okay if you didn't do it though.
can I thaw in the fridge for those hours or do I have go sit them out like you have to thaw?
I prefer to thaw at room temperature. If you thaw in the fridge, they will still be cold when you take them out. I personally don't like to fill cold cakes. But if you like to do that, then you can thaw in the fridge.
how long can I freeze a cake for?
I would say they can last up to 3 months or so! Just make sure you wrap them really well (2 or 3 times) in the plastic wrap.
Is it okey to frost it even just came from freezer?
I never frost frozen cakes, I always let them thaw first. Condensation can form on frozen cakes and it could cause issues with your icing!
is it necessary to thaw the cake for 6 hours? if i have an urgent order than what should i do
I like to thaw them completely just to reduce the chance of any issues. If you frost a frozen cake, you could have issues with condensation and / or blowouts. If I had an urgent order, I would bake the cake and let it cool without freezing it, then I would fill and frost it.
@@KarolynsKakes mam where should I thaw my cake? on the shelf or in refrigerator
Your videos are great and really helpful. I'm learning a lot. Thank you
Happy to hear that! You're welcome honey! 😊🙏
How long can cake layers be frozen?
I would say 3-6 months if you wrap them up really well!
@@KarolynsKakes Thank you! Love your videos. :-)
Do you have problems with cake sticking to plastic wrap and “peeling off some cake”?
Sometimes the tops may slightly stick, but not too much. And I level the tops off anyway so it doesn’t matter.

*** Sorry for big message ***
You are a let have helped me 🤗🤗🤗🤗🤗
I’ve only gotten that question a few times. But I’m always honest. Most of my customers know I use a doctored mix recipe for my cakes (because I put it out there on YT). And I’m not ashamed of it. I love it, they love the taste and texture, so I don’t let it be a bad thing and it isn’t! It’s all about perspective. I’ve had one lady not order from me because of it but that’s okay!
@@KarolynsKakes thank you so so much for your fast reply
Oh yea it’s forgot you do TH-cam 😄😄
No of course they know but was for early time question
Any how as long I am use extra ingredients so I am ok ) I think) as I said leave in small down plus they don’t want to give me right money
** If they asked I say I do my way and some time. Mix recipe with box **
I do more eggs less cake from scratch
And customer are happy
Special love to you you are my supper hero 🤗🤗🤗😘
Yesterday I was watching your Navy blue colour fondant video
Not complete yet 🤗🤗🤗
Buenísimo videos
I ice mine frozen. They sweat every single time! Going to try thawing next time. I wind up with viva paper towels blotting droplets it’s very frustrating
That's definitely why you're having issues! Hopefully this will work for you.💜
I stacked my cakes in the freezer before they froze so they are abit distorted.. I have no idea what to do as a 1st time baker
You want to make sure the cakes are completely frozen before stacking more on top. If I have a lot of cakes to bake, I will start a few days early so I can bake and freeze, then stack more on top. I also have two fridges with freezers that I use just for my cakes, so I have a lot of space to spread them out!
You are the best
Thanks girl! 🥰🥰🙌🏼
