    I’ve made this recipe twice now, each time getting multiple dishes from it. It is absolutely fantastic. The noodles are stretchy with a really nice chew and bouncy spring to them. The first time I made these, I made the entire batch into spaghetti noodles, eating some right away and freezing the rest. When cooking from frozen, you need to cook them right away after removing from the freezer otherwise they’ll clump into dough balls when defrosting. But they froze beautifully and cooked up perfectly from the frozen state.
    The last batch I made, I rolled out some of the dough and just left the remainder unformed in the refrigerator. When I wanted pasta about a week later, it was just a quick roll through the pasta maker and boil. That worked out so well that I might just leave a batch permanently in the fridge so that I can make whatever pasta shape at a moment’s notice.

    I am so excited to try this recipe. I have tried other GF pasta recipes with my Kitchen-aid pasta attachments for years but they all got stuck in the machine (even with dusting with flour). So I gave up and make them by hand. I spent more time cleaning the pasta machine than making actual pasta. Thank You!

    Nice pasta attachment! On my video I use a KitchenAid mixer and the old-fashioned Italian hand crank pasta machine.

    I made your chocolate chip cookies the other day, wow! So good. I actually like to make them bite sized though for easier snacking and milk dunking. The rum really does add that extra bit of flavor, great addition!

    quick question: why not use the kitchen aid to prepare the dough?

  • @tylerrock1453
    @tylerrock1453 2 ปีที่แล้ว +1

    Kneading by hand isn't necessary since you already use the food processor. U just want it smooth. There's no gluten to develop while hand kneading... 🙃

    • @LetThemEatGlutenFreeCake
      @LetThemEatGlutenFreeCake  2 ปีที่แล้ว +3

      Yes, I realize there is no need to "knead" the dough for the sake of gluten development. The reason I knead the dough is because it's a little tacky and not smooth. So, for this reason, this recipe requires a little "kneading" by hand. 🙂

    Question. For simplicity sake, can I just do 3 whole eggs and 3 yolks and never mind the water? Or is there a reason I shouldn't?

    • @LetThemEatGlutenFreeCake
      @LetThemEatGlutenFreeCake  2 ปีที่แล้ว +3

      You would still end up having to add water and maybe even more than what the recipe calls for because egg whites can be very drying. I would stick to the original recipe.

      You could try, but the tapioca starch gives a stretch that doesn't usually come from cornstarch.

    Why do u need to rest the dough if it doesn't contain gluten? The reason u rest dough is bc of the gluten.🤔

    • @LetThemEatGlutenFreeCake
      @LetThemEatGlutenFreeCake  3 ปีที่แล้ว +1

      Because the dough is sticky at first and allowing it to rest allows the gluten free flours to soak up the extra liquid. If you don't let it rest, it will be so sticky that you'll have to use a lot of extra flour.
