Description:
Ingredients:
Rice: Typically, 1 cup boiled rice or Katsambar rice
1/2 cup Raw rice
1/4 cup urad dal
Sugar: 1 tabsp sugar. Adds a slight sweetness to the Sannas.
Salt: For seasoning.
1/2 cup fresh Toddy: Traditionally, a local alcoholic beverage made from fermented coconut palm sap is used for fermentation, though yeast is a common substitute today.
Preparation:
The rice and dal is soaked for several hours, typically overnight.
The soaked rice is then ground into a smooth batter along with a bit of sugar, toddy and salt.
The batter is left to ferment, for several hours until it becomes airy and fluffy.
Once fermented, the batter is poured into small, greased molds or shallow cups and steamed until cooked through.
Texture and Flavor:
Sannas have a soft, spongy texture with a mildly sweet taste, making them a versatile accompaniment to both sweet and savory dishes.
They are often compared to idlis but have a unique flavor.
Serving:
Sannas are traditionally served with spicy Mangalorean curries, such as pork bafat, chicken or mutton sukka, or vegetable stews.
They can also be enjoyed with coconut chutney or sambar.
On festive occasions, they may be served with sweet dishes like coconut jaggery syrup.

Sannas hold a special place in Mangalorean Catholic cuisine and are often made during Christmas, Easter, weddings, and other significant celebrations.

Can we use mutamo rice instead of cutsambar rice?
What i showed is the traditional age old recipe. If you use mutambo rice, u don't add raw rice. Instead take 1.5 cups mutambo rice
