Transcripción de la Historia en Inglés:
How much food in your fridge will you throw away before eating it? Maybe hamburger buns from last summer’s barbecue? Milk that’s past its date? Or carrots that are not crunchy anymore?
Every year, countries all over the world waste huge amounts of food, and the United States is one of the worst offenders. 37% of U.S. food waste comes from individual households. Around 20% of that food is thrown away because consumers are not sure how to interpret the dates on the labels. But most of those groceries are still perfectly fine to eat. So if the dates on our food don't tell us it’s spoiled, what do they mean?
Before the 20th century, food usually went straight from where it was grown to where it was eaten. People could tell if food was fresh by using their eyes, nose, or hands. But when supermarkets started selling processed foods, it became harder to know how fresh something was.
In the U.S., stores used special codes on packages to track how long food had been on shelves. In the 1970s, customers wanted to know this information too. That’s when many stores started using a system called "open dating," where products are labeled with dates to show the best time to enjoy their freshness.
These dates, however, don’t show when food will go bad. They’re not usually based on science, and there are few rules about how they should be set. Most companies pick dates that make sure customers eat their food at its best so they’ll want to buy it again. This means lots of food is safe to eat even after the date on the package.
Foods like cookies, pasta, and canned goods may not taste as fresh after their dates, but they’re usually still safe. Canned foods can last for years as long as the can isn’t bulging or rusty. Frozen foods, if kept at low temperatures, can stay safe for a very long time.
Refrigerated eggs are good for up to five weeks, and if they go bad, your nose will let you know. You can also tell if fruits and vegetables have spoiled by their smell, slimy surfaces, or mold. Of course, there are some cases where it’s better to be cautious.
The USDA says you should eat or freeze meat within a few days of buying it. After their printed dates, foods like ready-to-eat salads, deli meats, and unpasteurized cheese are more likely to have harmful bacteria that you can’t smell or taste. Infant formula also has dates that indicate safety, and these should always be followed.
In a 2019 survey, more than 70% of Americans said they use date labels to decide if food is still edible. Nearly 60% said they throw out food once it’s past the date. Restaurants and grocery stores often do the same. To avoid all this waste, many experts suggest laws requiring two clear phrases on food labels: “Best if used by” for freshness and “Use by” for safety.
This isn’t a perfect solution, but some researchers estimate that setting these standards at a federal level could prevent about 398,000 tons of food waste every year in the U.S. Some grocery stores in the U.K. have even removed dates from produce labels to help people trust their own judgment. Others suggest giving stores and restaurants rewards for donating unsold food.
In the U.S., at least 20 states don’t allow food donations after the labeled date, even though federal laws protect these donations. In France, supermarkets are required to donate unsold food.
No matter what your government decides, the best way to stop food waste is to eat what you buy. And remember, your eyes, nose, and taste buds can usually tell you if food belongs on your plate or in the trash can.
