What a breath of fresh air. I enjoyed your viceo. I took delivery of some lemon balm plugs this spring. When they arrived they looked half dead, but they survived and are thriving. I won't get much of a harvest this year, but I expect a good one next year. I will have to find a beekeeper near me!!

Question! I've watched so many videos on honey infusion. So many say that fresh herbs will mold. You look like you know what you're doing compared to suburban women in fancy kitchens. P.S. You're a real human! You're very cool and very real!
It will only mold if you leave it in there too long and the plant matter isn't below the honey level usually I'm making sure to strain before 6 weeks although I'm usually straining by 4 weeks and just making sure that plant matter is under the honey.
I’m about to make some lilac honey and am just taking a look at your honey infused medicinals. I did watch your tincture video on lilacs and glad I did bc, essentially I think I just made some bitters ( 100% vodka) I wish I would have known I was going to need glycerine bc I’ve honestly waited to harvest and my lilac flowers and now are almost at the end of their cycle 😬 But as always, thanks for all the wisdom you share with us all April 💞🙏🏻
catching up on vids I missed. re: fermenting. I use an oversized lid on the jar with a small rock glued to it for a bit of weight. It will burp itself before it blows up or cracks the jar, but otherwise keeps air out

I'm smart enough or just lucky :) I did only invert the jar here and there; so far so good, strained it today; only a small jar, the other I did with honey and alcohol (strains so much easier LOL) I used the strained honey lemonbalm remains and made some tea, yummmm!!!! Now I can compost the rest.
