    I'm 70 and I learned to preserve vegetables and fruits by water bath from my mother. We never did this with meats, I wonder why?
    But the last couple of years, I found this meat canning procedure online done by some East Europeans. I decided to try it myself and I am hooked! I don't have a pressure canner, soI still uses the old way. With success!
    I can fully agree with this beautiful young lady that canned meats are a lot tastier and tender than normal cooked meats, no matter how good your cooking is. Probably that is caused by the length of time it is cooked in the water bath or intense process in the pressure canner. It is delicious!
    Then I als want to congratuale this wonderful young woman on her speech!
    I am very hard of hearing, growing deaf and need headphones to understand what people are saying, plus being able to see their face.
    This lady has an impeccable articulation, speaks very clearly and slow enough for me to understand everything easily.
    BRAVO! So many young people don't know how to speak clearly anymore, they mumble, and are too lazy to move their mouths correctly. Also it is not taught in schools anymore, I know...🙄😒
    So once more young lady, THANK YOU for making listening to you a joy!

    Deer season is coming/ here. and I have a bunch of tags (and a freezer) to fill.. and, as a single guy, the ability to save/ store my harvest is so critical... bottom line, I love this series ;)

      Canned venison is sooooo good !!! I’m a single woman and I have an old guy that lives down the road that still likes to hunt but doesn’t want the venison ! Even though I’m picking up 1/4 beef tomorrow, I hope he still gets me a deer !!! I probably don’t need it but I’ll have enough food to feed our small town if needed !
      I couldn’t keep up on the garden canning so I’ve been putting tomatoes in the freezer, now I’ve got to get them canned so I have room for the beef……apparently I’m a food hoarder 😘 Deer hunting is the beginning of November here in northern Minnesota so hopefully he gets it towards the end of the season.
      So glad I don’t have to buy much at the grocery store !!!

    Those drippings browned on the bottom of the pan is exactly how I flavor my gravies.

    Back in the 1960s, our school cafeteria got some kind of canned meat from the government food program. A lot of kids hated it, and referred to it as "Mystery Meat". They called me crazy, because I loved it. I wish I could reproduce that canned meat in gravy. but all i know is that it had short fibers, great gravy, and was well cooked. It still makes me hungry thinking of it 60 years ago. I'll have to try your recipe.
    PS With my home dead center of the current major hurricane track, I am now watching your cooking large volume meat video again.

    It's funny to hear the different uses of words like "gravy". I am originally from the wilds of North Carolina and what we called gravy was a starch thickened liquid which would not be safe for canning, but I never thickened the meat broth before canning anyway. Thank you for touching on the safety aspects of canning starch thickened gravy, HT.

    Looks delicious. Downloaded for later. One pastor Amon many who was against preparing for self sufficiency, said mres are poison because of the preservatives so it’s a bad idea anyway. I’ve never bought a military mre, but this kind of thing is exactly what we need to feed our families. It’s a great way of cooking a ton of food now for many meals down the road… no emergency needed.😊🙏🏻

      MREs do not have as much processing as canned foods. Some pastors should read labels in the supermarket and warn their congregation about the poison everyday food contains.

Anti prepping is strong in many gatherings . You are correct. I think your reasoning is solid. I think when they become franchises and pyramid structure churches they become beholden to follow the teachings of their leaders and not the , well, there I go again. I understand them not encouraging people to put faith in themselves, but I think wisdom, faith, discernment and the service we owe our families requires us to structure our lives according to what we believe is coming down the road.

    Loving your rebel canning or “traditional canning” as we should say. I hate pressure canned meat, there I’ve said it. Smells like dog food when you open the jar. The exception is my chilli con carne which I cook 70% on the stove before I can. Love your videos girl ❤

    I did a search this morning for canning gravy. This is the one and only video I watched. My turkey gravy is on the stove right now. I like the idea of adding the thickener later. Is a great idea. I have so many meats I could do this too. I’m actually looking forward to the long cold winter. Now I have something to keep me busy. I’m an outside gal. But I hate the cold. Lol

    Just a tip- use the back of your knife to scrape the vegetables- it helps keep the knife sharp 😉- great video and can’t wait to view all your other videos!

    You make incredible videos. your voice is clear and pleasant. The food looks incredibly delicious. You are very knowledgeable about canning and especially about water bath canning which I had not seen since I was a child and my mother did this with a blue and white speckled pot that had been repaired with tiny screws and bolts :). The food was always good and healthy so I know that works. I would never use modified cornstarch in anything. Thank you for sharing your talent and have a blessed day. .

    Thank you so much! Everything is well explain with open heart. Women and wifes like you who cook from scratch and take care of their family is 5 % at most in US population.
    My grandparents cooked and canned very similar, I think without any thickeners, but gravy was thick and jelly when it was not warm. Maybe because of bones and fat.

      The bones and joints have gelatin in them. Natural broth will gel up when cool. Like the chicken broth I put in the pot.

    At 9:34, you mention that it's possible to add veggies (potatoes, carrots) to the jars. Do you mean to cook those first with the meat cubes or to add the raw veggies to the jars? TIA.

    Q: If you're adding lard couldn't you have just kept some of that fat you trimmed on for that instead? I didn't know you could add oil for canning recipes. I was told no oil or no butter/dairy or flour etc.

      I used rendered fat. That is in the jars regardless cause you never get it all off. So yes you can use some of the fat.

    Love your videos always very informative enjoy learning new ideals.I was wondering if that was a aluminum pot you cooked the beef in,if it was you might want to look up the dangers of cooking with aluminum for your health and your kids.

    How does cooki g the meat and then canning for 3 hours not cause the meat to be overcooked? Seems like it would be rubbery.

    There is no way I am going to can something with flour or cornstarch….you are right….do it when you are ready to eat it. Put a lot of flavor in your liquids but no thickeners. Stay safe.
