Another Arab here and have to disagree. Telenovelas were the extent of our exposure to Mexican culture but even that ended in late 2000s. The only Arab culture that has ties with the Mexican and Hispanic culture as a general are the Lebanese (and it was also because of them that the rest of the Arab world were introduced to Telenovelas in the first place).

The Mexican version is made with a choux dough (yes, Mexican churros are gastronomically related to eclairs and profiteroles) that consists of flour, water, melted butter or oil, eggs, a little salt, and vanilla while the Spanish version is made sans the eggs, sugar and the fat is sometimes omitted too. Another difference is that we Mexicans often add sugar and cinnamon to our churros after frying while the Spaniards may omit adding sugar. I will have to try making BOTH versions in order to make a good and fair comparison.

But the recipe isn’t the point. The point is the origin of the dish. It makes sense that a recipe would somewhat change in another country. Pizza is another example. How is made can change in different countries. It doesn’t change the fact pizza originated in Italy

Mostly just on stuff like nixtamalization, mole sauces, and stuff made from indigenous ingredients and procedures, so I don't know where you're getting this from
