    american here, very surprised at how adventurous aussie taste buds are. wheat gluten and those rice cakes are pretty uncommon as chinese takeout in the US and I think americans tend not to order what theyre comfortable with and avoid very "ethnic" ingredients, so shout out to the aussies!

      I've only lived in Australia and Hk before so i can't compare Aus with other western countries, but i find that a lot of chinese restaurants in australia are pretty authentic, the food they serve is basically identical to the one's back in Hk. Also from my understanding, sweet and sour pork isn't a dish invented in the US.

    • @mem5864
      @mem5864 2 ปีที่แล้ว +63

      Australia's culinary and immigration timeline with China is different than the U.S.'s and that makes a big difference!
      Australia started accepting Chinese refugees during WW2, and that's when their restaurant industry started really booming. Chinese restaurants existed before then, but they stayed close to their communities and were popular with artists, students, and professionals.
      But Chinese restaurants had already sprang up across the U.S. by the 30s, following the gold rush and railroads, and were cheap, reliable staples of working class neighborhoods. Chop Suey was so popular that Americans were shocked in the 1920s to learn it really wasn't a Chinese dish at all.
      Chinese food wasn't fused in Australia that way. It stayed authentic because Chinese neighborhoods weren't really embraced by their neighbors until the ‘60s and ‘70s. New influxes of immigrants and their restaurants didn't really come to the US until the 70s, after immigration policy changed in the 60s.
      Many Americans enjoy authentic, diverse Chinese food, but there’s no need for the masses to seek it out because the Americanized version is already so popular. The Australians, on the other hand, have historically had more access to and appetite for that culinary diversity.
      That's a very condensed version of something that I hope a few other people will think is as interesting as I do! :)

    My favorite Chinese dish was made at this little hole in the wall place in Saratoga, California; it was a stir fry made with Chinese eggplant and tofu. The great thing about Chinese eggplant is that when cooked it’s less mushy and has a lovely bite to it.

    • @joshua5g
      @joshua5g ปีที่แล้ว

      Eggplant is usually deep fried before stir frying or braising as it creates a thin crust that prevents it from going mushy! It's the Chinese secret to amazing eggplant.

    French Canadian (Quebec) here. Not many things in that video i can relate with such as the the wheat gluten (most Chinese immigrants here are from Chengdu and Beijing) as it's more of a Shanghainese dish (maybe those Chinese/American restaurants might have those other ones) the only thing found here that is made to our tastebuds are hunan dumplings (peanut butter (spicy sauce) with dumplings).
    My favorites as for take out are Peking Duck with Eggplant in black bean sauce or Zhajiangmian (not to confuse with the sweeter Korean version) and tiger skin chicken feet or pig ear salad and Dan Dan noodle or pork intestine noodle soup, my go-to as dumpling are zongzi, and you got to have some pork belly with that such as Hong Shao Rou or some char Siu or Cha Siu Bao.
    For a country so "close" to China and have such a "basic/plain" selection of items is very particular.
    I would like to know if they have more traditional dishes from various Chinese provinces available there or is that what the masses eat there?.

      @@lucyzhou4446 Don't get me wrong there are a few (you can count them on one hand) restaurants that have American-ish Chinese foods but that is where most Jewish people go to (their palate is very bland and not much cross contamination 1 wok = 1 plate, no dairy with meat and they never close on Christmas nor Easter) but as our culinary background is not the same as most English Canadians as we have been brought up to eat from nose to tail everything on an animal. And that the spices used in mainland china are widely used here (cloves, star anise, ginger, garlic, fennel seeds, pepper green onion and ginseng [yin...we are the largest exporter (of cooling variety) to China and Singapore] though cinnamon isn't very popular with us but we do love mace and/or nutmeg). Funny thing is not much maltose or sugar cane or corn syrup used here they use honey or maple syrup as a sweetener.

      Is that a take away? From my experience, steak restaurants here tend to be more fancy and don't have a take away option. Unless you mean a pub (where you can sometimes order steaks) but even then take away is somewhat rare (no pun intended haha)

    SOHAN, WHAT ARE YOU DOING WITH THE XIAO LONG BAO?! Don't poke it. You carefully lift it up and place it on a spoon, bite the top off and then add a little bit of the vinaigrette. There's a bit of stock or soup inside the filling with mince. It's a delicate piece and must be handled with care

    Wheezy's order was really interesting. I've never heard of wheat gluten. Ryan's was so good though. Although that fried rice was pale as hell. Makes me curious to go to Australia to see if the food is really that good.

    • @hannah-vv9ru
      @hannah-vv9ru 2 ปีที่แล้ว +3

      you're probably used to the southern chinese variety of fried rice where both regular and dark soy sauce are used. yangzhou fried rice is usually pale since that's the style
