I love Rao’s sauces! You are right they are the lowest in carbs for prepared tomato sauces and I find they are perfect for adding to Italian sausage or chopped beef. Last week I used a jar with some spaghetti squash for dinner.

I just added the empanada maker to my Amazon cart..... Me and my wife like the la bandarita low carb wraps also.... One thing you may want to try is to not put sauce in the pocket but heat dish of the sauce and dip... That is what we used to do before we went low carb

I really like this recipe. It's easy and tastes great. When I saw you use the empanada maker in a previous video, I immediately made myself a pizza empanada using my empanada maker. If the tortillas are a bit large, like mine (Mission Carb Balance) I just open the empanada maker up to a circle, and press down using the bottom to cut the tiny bit of excess off. I didn't mix my ingredients, rather I layered them on one half of the tortilla. Yum!
Steve, great recipe and a game changer for me. I just started keto two weeks in and I needed something different, I typically don’t like those brand of tortillas. However I had some in the fridge and they are delicious when you stuff them an air fry them thank you for all you do . Great channel!
The cool thing is that you can make empanadas like this with almost any leftovers. I did it with leftover beef spareribs and some sharp white cheddar. Play around and have fun. 🙂👍🏻

I love your recipe videos! And the massive keto tortilla review with lots of readily available products with blood glucose results was awesome. I use the la banderita or ole tortillas. They are both by the same company and i can get them so cheap in big packs at Sam's. And there is usually at least either the ole or la banderita availability, even at our very small Walmart in a rural AZ town as well as several other rural walmarts throughout the state (and big cities as well). I love to use the tortilla fold that Keto Twins showed and i coat both sides of it in bacon grease (or butter if i don't have bacon grease) just barely fry the inside and fry the outside to lightly brown, and that is SOOO GOOD! Makes it taste like a bonafied fried quesadilla tortilla would be. I love that both the ole and la banderita have good oils and had a similar blood glucose impact. Thanks!
I agree with you re: La Banderita tortillas. The are the best tasting in my opinion of the low carb, zero net carb choices. I use them a lot and now want to try your hand pie ideas with several filling options, both savory and sweet. Thanks to you and Terri for the pizza pocket review.
Awesome video! I went online at Amazon last week to see this empanada maker for $6.92 and today.....$7.70! Yes, you did say in your last video that the prices had gone up since you bought yours from Amazon. If anyone wants one, you better order it soon!....before the price goes up....again. I went to a thrift store and got mine for less than $3. I am so excited to make this recipe...and others. Keep sharing these kinds of videos. I sure enjoy them! I also use Banderita tortillas....good taste, good price.

What a freaking great idea! I've had a set of 3 empanada presses for years. I don't think I've ever used them. I'm doing vegetarian keto, and I think these would be great just stuffed with mozzarella, sauce, and fresh basil. I like the mini tortillas. I wonder if brushing the outside with olive oil or the rest of the beaten egg would give it a crispy/pizza crust flavor - maybe even sprinkled with garlic powder. Thank you for the video. I've frozen them, but I've yet to dial in the perfect way to re-heat them. I feel like 1 minute in the microwave followed by 4-6 minutes in the air fryer get them pretty close to the freshly made version.

I think whole milk mozzarella will give the gooey-melty result faster than part skim. I've even found it pre-shredded in a grocery store, but can't remember which one. Thanks for the tip on amping up the Rao's to make it more like pizza sauce! I even find their pizza sauce lacking in tomato-ey flavor.
I like the Aldi wraps (L'oven Fresh-Keto Friendly), but they are also too big for the empanada maker. They do make a good pizza crust though (I prefer the super thin crust pizzas). I'll have to look for the La Bandarita brand tortillas.
I'll have to check out the Aldi wraps. The Turano brand is the perfect size/thickness to substitute as an eggroll wrapper, but they take my glucose higher than La Bandarita and use canola oil.

You could probably do them in a convection oven, though you might want to increase the temp to 400 and you will probably need to bake them a bit longer.

Currently when I have a pizza craving I’ll order a pizza and just eat the topping. I suspect that would work just fine. They are La Bandarita "Snack Size". They are a size in between street taco and their tortilla wraps. I'm guessing 6" in diameter.

I suspect that would work just fine. They are La Bandarita "Snack Size". They are a size in between street taco and their tortilla wraps. I'm guessing 6" in diameter.

I think she had to work a little hard to sane-wash RFK, Jr., which I can say without getting political. But it's always good to bring up metabolic health and how little doctors know about nutrition and chronic diseases. Undiscussed was her inherent conflict of interest as someone who has a competing stake in the marketplace and that she's a vegan (or was, per Levels podcast info). But most of what she said would appeal to the health-focused keto crowd (esp the Overtime segment on YT).
