Edd. I think these cookies are amazing. I love biscotti and I love pistachios. I'am Italian 🙂. Years ago I made a version of a biscotti that I created. I have to look for it I misplaced it lol. Great video Edd ... so one could add lemon or lime zest, or balsamic vinegar, to cut the sweetness?? I enjoy finding a basic recipe and personalising it ... do you any more ideas for variations? Cheers
I wouldnt add vinegar as the flavour would be too pronounced but citrus zest would absolutely help without covering up the pistachio flavour too much. The salt in the recipe is there for the same reason
Hi Hala, that crispiness & stickiness is exactly what makes this cookie unique. It comes from using the almond flour (ground up almonds) instead of wheat flour. It sounds like they came out perfectly!
Tania Bou Samra it’s not about the brand but the style, if you want to use these look for either green pistachios or skinless blanched pistachios. Otherwise any regular pistachios will work fine :)
