They were just saying that it wouldn't be the same show without Zuko as a character and his arc it wouldn't have been the same. Aang was the pivotal, touchstone character and watching his growth and triumph was fantastic. But unlike most other shows, the secondary characters play just as important of a role in the story and that's what made AtLA so special.
I know I'm late to this party but in one of the earlier seasons...I think... or Dragon Prince - there's an episode that you can literally see Aang's staff in the pile of "trinkets" this dragon obtained. hahaha. I just about died. I'm LOVING finding Avatar: TLA references in it, and I hope they keep doing it!
