What died was the last incarnation of Dream. Whenever a member of the endless dies, a new incarnation appears to continue his role. Its still Dream but with a different personality. It’s similar to the regeneration we see in Dr. Who.
Honestly sandman could easily just become it’s own animated movie.

Dream wasn't even the first of the Endless to die, Despair was killed before.
