Puff Paste (American Cookery, Amelia Simmons, 1796, Hartford, Connecticut) 2 1/2 cups of flour 1 cup of cold, salted butter. Cut into cubes 2 large eggs, whisked Combine your flour and butter using either a pastry cutter or a knife and fork. Work the butter into the flour until small, pea size beads of butter are spread throughout the flour. Add in the whisked eggs. Work into a dough with your hands. Cut into 2 halves and roll each half out onto a well floured surface. This recipe is enough to make a top and bottom crust. * Most puff paste recipes from the 18th and early 19th centuries are not comparable to a modern puff paste, but are rather like a regular pie crust. To Make a Cherry Pie (The New-England cookery, 1808, Lucy Emerson, Montpelier, Vermont) 2 cups of de-pitted cherries 0.5 cups of red currants (consider switching this up with cranberries!) 0.5 cups of sugar, divided in half A top and bottom pie paste Lay a pie paste on the bottom of a pie pan. Throw sugar over your bottom crust. Lay over it your cherries and currants mixed up well. Throw over it the remaining half of your sugar. Put on a top crust. Bake in a 350 degree oven for approximately 40 minutes, or until the crust is firm and cooked. Allow the pie to settle for at least 20 minutes before serving.
I need to try the pie dough recipes with eggs in them; every time I have tried to make pie dough that just calls for flour, butter/lard, and cold water, the dough is either too crumbly and never holds together, or it's too wet and sticky, and has a tough texture. Your dough looked perfect!
Very nice! I remember as a kid my dad and I would pick cherries off my aunt's tree and he would make pies and cobbler. I'm about to make a pumpkin pie. I hope it turns out good!
This was a great episode. I love your dress and apron, so autumnal. The pie looked really yummy, do you think the dried currants were put in to absorb extra juice? The look on your face when you noticed the arm moving was priceless… loved the flowers on the mantle as well…
Reading the receipt and seeing the second pie crust part with the fourteen pounds of flour made me more scared that old Anacronistic Annie waving in the corner lol
We hope you are feeling better! Verry interesting to hear the recipe of the 2 cherry pies! Happy Hollow s Even! David and Rebecca Like the Hoween Decor!
Justine your channel has really inspired me to make more interesting dishes at home. Man if people cooked without all the modern conveniences of today I can surely get my butt in the kitchen and cook! 😊❤

That skeleton waving cracks me up lol! That cherry pie reminds me of a big cherry tart. I'm used to seeing cherry pies with a layer of crust on top, maybe that's just me. Looks good though!
Next year I'll buy fresh cherries, pit them and preserve them in brandy. 'Cause I gotta try your cherry pie recipe! Hope you're getting better; you're in my prayers. 🙏
Okay, I’m cracking up over the interactive skeleton, even though it is 21st-century plastic! Justine, since you referenced fruit being preserved in either brandy or sugar, it would be interesting to see the how-to’s for different methods of fruit preservation . . . hmm, or just food preservation in general, in future videos. 😊
For some reason, I was skeptical that it wouldn’t be soup, but I can see that it was not. It looked really tasty! I will have to try that method for my next cherry pie. Thank you for sharing that receipt.
I love watching her channel although I feel a bit sad some times knowing my ancestors were in a different predicament at the time 😢but I love to learn old recipes and enjoy watching.
Oh Justine, I was just thinking of making a cherry pie! Just have to have coffee and my cute Justine fix. Cee, from the little cottage in ireland 💚💚💚🍀🍀🍀
I've never had cherries preserved in Brandy. However, I have had cherries preserved in moonshine. 😉 I wouldn't advise getting Moonshine Cherries too close to the fire if you know what I mean.

The skeleton with the pumpkin face looks kind of scary.
I've never had cherries preserved in Brandy. However, I have had cherries preserved in moonshine. 😉 I wouldn't advise getting Moonshine Cherries too close to the fire if you know what I mean.
Awesome 👍
I wonder how often pie was eaten back in the old days. Reading older books, it seems like it was a staple!
It really was because meat pies used to be popular too.
Nice Halloween decorations
No one noticed your ride hanging over the fireplace 🤭
Nice broom! 🧹
I’d be all about drinking that brandy from the cherries … 🍶🍷😂
Cherry 🍒 is My Favorite ❤️
