    Today, Mrs Crocombe is making Gâteau de Pommes (or 'apple cheese') - a sweet dish using the apples harvested by Edgar, the third gardener at Audley End House.
    Join Edgar as he harvests the apples for this recipe: bit.ly/2Sw477s
    INGREDIENTS
    500g sugar
    275ml water
    1kg cored and peeled apples
    The zest of 2 lemons
    Sliced almonds and custard for decorating.
    METHOD
    Make a syrup by boiling the water and sugar and let it boil for 15 minutes. Dice the apples into small chunks and add to the syrup. Stew for some time, stirring to avoid burning, until down to a marmalade texture. Add your lemon rind and stir. Let the mixture cool, then line a mould with a little butter. Push your mixture into the lined mould. Store somewhere cool until needed. To serve, turn out of the mould and decorate with sliced almonds and edible flowers.

      Actually, dinner guests would never see the cook in an estate that size unless the mistress invited her to the dining room for some special praise. Even then, it would be highly unusual and improper for the guests to be exposed to the kitchen staff.

      @@nathancarlson7878 Being "In Service" was not slavery. There were tiers of servitude - classes, if you must. The young man that brought the apples was the Third Gardener and he wore a tie. He would have had a decent wage and housing on the grounds, probably a private room and a scullery maid to clean his chamber pot. In the house, Mrs. Crocombe was the boss of the kitchen, probably a step higher than the Head Gardener since she was in the manor, and she was allowed to be married - that was quite a thing. Mrs. Crocombe is not rich - the people she served were. Her cool demeanor was meant to keep the classes in place and let them know that with power came privilege.

      Anyone who serves as a cook, even if it's just cooking for your own family, knows how aggravating it is to have unannounced guests just showing up for dinner. You have to start preparing more dishes--as quickly as possible--when that happens. Not to mention that sometimes we just don't have enough ingredients to make more. This happened to me on occasions, and I DO NOT appreciate it.

    • @MidoriNekoChan
      @MidoriNekoChan 5 ปีที่แล้ว +213

    Doesnt gateau mean cake in french?

    • @rsmith6366
      @rsmith6366 5 ปีที่แล้ว +52

      It is called a cake in French because it is technically a cake. It is called a 'cheese' in English because it is set similarly to a cheese (no moisture, shaped, left to set). It's just a funny name to go with the dish, but which has no connection to the French name.

      It does, but that is the direct translation from French. It has a separate English name; unrelated to the French name, which compares the setting of the fruit to the setting of cheese. To call it a cake would be it's loosest term in English; Apple Cheese would be the dish's specific handle.

    Just made this. Its wonderful, not just to look at, but to taste as well. I added a bit of gelatin to it because I was afraid it wasnt gelling enough but in hindsight that probably wasnt necessary because mine it ended up being even a little firmer than I intended (though i didnt find that to be a problem in any way). I decorated it with almonds (I feel mrs crocombe would not approve of anything less) and candied mint leaves and juliened lemon zest, both of which i made by brushing them lightly with egg white and then tossing with sugar, letting them air dry afterwards for several hours. They turned out delicious and nice and crunchy, not to mention a beautiful garnish. By far the hardest part was getting it out of the mold. i recommend a thin metal one rather than a ceramic one as shown in the video; easier to dunk in hot water to free the edges from the mold. Also required much wiggling and a little bit of manipulating with a finger to break the suction. If you dont have a vintage jelly mold, i suspect one could also put this in a simple saucepan, the result would be a far simpler shape but would, i suspect, have just the same impressive quality.

      I think Mrs. C meant they all had to be the same size for a different recipe.
      She said she was "planning" to make a dish with whole apples.

    This recipe is so versatile that when I burned it, it tasted good- almost like burnt Carmel. It’s like a jam and it goes great on the side of vanilla bean ice cream. Keep posting! Thank you!

    I simply love Mrs. Crocombe's actor, I feel she legitimately plays the part of a royal chef. She cracks me up with her mannerisms and way of being. I thoroughly enjoy this series

    2:33 The stewed apples parted in the pan like Mrs. Crocombe wanted because it did not want to suffer her wrath.

    I myself live in Russia, but I adore watching these videos, I love your language, it’s pronunciation. I hope that one day I will come to UK to see all this beauty by myself.
    Have a good day whoever is reading this ✌️

    It’s great watching the preparation and presentation however, it would be fitting to see how the dishes of the era was served for each dish made.

    Gosh, this is the most wholesome community I've EVER seen!!! Thank you Mrs. Crocomne for bringing us together. ^_^
    Also, I LOVE the lad's face when she says "Gâteau de Pommes", he's like "Gate-ga-what?", and then his reaction when she says she needs all the apples the same size and he's like "Oh no... not again..." XD

    Before we begin we must give each apple a little kiss to ensure sweetness. Then give them a good disapproving glare so they’re not TOO sweet.

    I always interpreted Gâteau de Pommes as a flat cake made with layered apple slices poured over with cake batter! Victorian dessert cooking is very very different from what I'm used to so this is a very interesting learning experience!

      Gateau refers generally to all cakes. In the past Gateaux has been used to call Flans, now a Gateaux would be used to refer to something like a Black Forrest, however cake is cake in any form and this is still technically a cake.

      R Smith oh I never said that it wasn’t!! I just said I’ve never heard of “gateau” used this way before
