It’s really awesome *seeing* Chefs in the spotlight! I love the dialogue and love the trial of different concepts to find that vibe and it’s just cool! Thanks Chef

28:04 "It's extremely freeing. Now, you can pursue something creative"
That is roughly the same line that was used in my company at the beginning of replacing 80% of jobs with overseas outsourcing in 2009.
Efficiency could mean more creativity if you are at the top of the food chain, but if you are at the bottom, then it simply means you are redundant. Just as if you are a head chef, then you may well be more creative with improved efficiency. But if you are a line cook, then you may simply be redundant. This applies to most industries out there.

People have to also remember that Heston staged at Le Manoir with Raymond Blanc back in '85 at the same exact time Marco Pierre White did and all 3 are still great friends.

Not sure if this podcast works as a video content, if it's just a conversation without any imagery beyond two people talking. It's not compelling enough to justify sitting for 50 minutes to watch people talk. But I understand that your content needs to be monetized and youtube is probably the easiest way to do it.
