I agree with you. I think that reputation came from the 14 years of food rationing British people endured from 1940-1954. Even then, and thanks to good old-fashioned cooking skills practised by many working class women, home-cooked food was far better than that served in cafes at the time. During the war, American GIs were shocked at how little people had and if their experience was of eating in cafes, that's where the poor reputation came from. That's only my opinion though.
I think British cooking traditions are very similar to Irish traditions and I absolutely love the old recipes. They never had much to make a meal from but omg they put us indulgent generations of today to shame because they made delicious food from very little and that’s why I love watching Rik.
I never think about my next day dinner. Before going to sleep I watch Rik. Nibble as he cooks because I am starving after I see what he makes. Check my fridge for ingredients. If I need something I order my groceries on line (yes, even at midnight). They arrive the next morning. Do my prep and voila, supercalifragilisticexpialidocious every time!!! The spelling is correct, I looked it up.

So many of your recipes look strangely like some my mom used to make in Quebec in the sixties. I guess they are part of the heritage left by the Brits when they were in charge of the country. My mom used to make something almost exactly like that. However the vegetables changed according to the leftovers she had in the fridge. Wonderful memories your channel brings to a man from the grand Montreal. And that will be my dinner tomorrow by the way.

I've made shepherd's pie and cottage pie, but Cumberland pie is new to me. It will be perfect for my family because we like to have mashed potatoes with lots of things. Thank you for the introduction.

My Father would get irritated if he had lumpy mashed potatoes...as soon as I left home, I never ate them again without lumps :) British food sometimes gets a bad rap...all I can say is, they invented mashed potatoes and gravy...nuff said :) Great dish, thanks Rik.

Looks delicious! Great for a family meal. Until I was 59, I always cooked ground meats the same way, the way you did here. And I called it browning because that's what I was taught. But there was hardly ever any visible browning that occured. The food tasted good, so the name never mattered to me. Then I would see chefs on TV when the Food Network came into being who insisted on the importance of browning until the meat developed a crusty texture. But then they'd toss the crusty browned beef into a soup where all the brown color would disappear along with the crusty texture. I laughed and believed it was just hype. All they'd accomplished was adding more dirty dishes to wash and wasting time. Then I saw a great video where an Oriental chef taught how to season a stainless steel wok to make it non-stick prior to cooking with it. He also went into great depth about why browning is such a critical part of Oriental cuisine. I tried what I learned from him. I browned ground beef at a screaming hot temperature in a controlled manner as he'd taught. I achieved a beautiful brown crust over most of the meat. I was flat out amazed at the flavor increase this imparted to the first soup I made this way. My whole large family noticed and asked me what I did differently. I still cook ground meat the old way too, but now when I crave that deep savory flavor I've discovered, I know how to achieve it. Thanks for the video!

Yumyum! I've got some Panko crumbs, I put it on my cottage pie, and then topped it with grated mature Gouda. I only had pork mince, but it came out well! (Note to novice cooks: NEVER use a whisk or a blender to mash potatoes. You will end up with tasteless glop, like wallpaper glue).

On occasions I like to make a similar type of pie but instead of using beef, or lamb mince I like to change its name to either a feathered game pie or a polterers pie depending on the meats that I have available ie feathered game can have the meat from pheasant, partridge ,grouse and pigeon, basically whatever bird has flown over the shoot that he has last attended and that I have managed to make him release from his freezer or for a polterers pie it’s more likely to contain the meat from the farmyard’s birds , so chicken,turkey,quail, Guinea fowl but basically anything else that he manages to bag in season and doesn’t want for his own table. Any way I like to cut the meats into small cubes no larger than a centimetre in size and stew it all together with the usual vegetable accompany of carrots,celery and a little bit of onion and if I can find some mushrooms that I recognise as being safe to eat they join the rest of the pie filling for the last 20 minutes or so of cooking. Then like you it gets covered with mashed potatoes and cheese and placed in the oven to crisp up the top.

I've just made this and it was delicious 😋. I made 1kg of mince so we can eat off it for days and did put in a tin of chopped tomatoes as well as the tomato paste, with some sugar to balance out the sourness. The crunchy topping was to die for ..... I've never put panko breadcrumbs on this type of pie before and now I'll do it every time. Thanks Rik.
Me ma was from Ulster and I’m pretty sure sure made this with leftover pot roast,but she had gravy left over too,it was the 1960’s and there wasn’t a lot of prepackaged gravy, she made it, but a lot of your recipes I’m familiar with. She was what my dad called a war souvenir , she’s been gone a while now,but I miss her cooking and her ,I’m making something I’ve always loved is her potato soup, she claimed that my great grandmother taught her how to make it over a peat fire in a thatched cottage. I’ve made it in restaurants I’ve worked at and that’s the story I’d tell,if asked,why it was called Pearl Leggetts potato soup.

That looks delicious,funny thing is in my 59 years in the US I have never made any of these similar pies,I have occasionally eaten one at an Irish friend’s home.The only thing I ever do with mince is make chili,hamburgers,keema,or meatloaf,never think to make these mash potato type pies.I too like mash that’s a bit lumpy,when I see potato purée on a menu,I ask for a substitute 😊

I'm confused Rik! When I make a cottage pie I put panko and Nutritional yeast (I'm B12 deficient) on top and still call it a Cottage Pie.... When you said Cumberland ( or Cumbria where my Grandfather was born) I think sausage - not minced meat? Looks delicious either way but I know if I'm confuced others will be furious haha

On occasions I like to make a similar type of pie but instead of using beef, or lamb mince I like to change its name to either a feathered game pie or a polterers pie depending on the meats that I have available ie feathered game can have the meat from pheasant, partridge ,grouse and pigeon, basically whatever bird has flown over the shoot that he has last attended and that I have managed to make him release from his freezer or for a polterers pie it’s more likely to contain the meat from the farmyard’s birds , so chicken,turkey,quail, Guinea fowl but basically anything else that he manages to bag in season and doesn’t want for his own table. Any way I like to cut the meats into small cubes no larger than a centimetre in size and stew it all together with the usual vegetable accompany of carrots,celery and a little bit of onion and if I can find some mushrooms that I recognise as being safe to eat they join the rest of the pie filling for the last 20 minutes or so of cooking. Then like you it gets covered with mashed potatoes and cheese and placed in the oven to crisp up the top.

I've just made this and it was delicious 😋. I made 1kg of mince so we can eat off it for days and did put in a tin of chopped tomatoes as well as the tomato paste, with some sugar to balance out the sourness. The crunchy topping was to die for ..... I've never put panko breadcrumbs on this type of pie before and now I'll do it every time.

Me ma was from Ulster and I’m pretty sure sure made this with leftover pot roast,but she had gravy left over too,it was the 1960’s and there wasn’t a lot of prepackaged gravy, she made it, but a lot of your recipes I’m familiar with. She was what my dad called a war souvenir , she’s been gone a while now,but I miss her cooking and her ,I’m making something I’ve always loved is her potato soup, she claimed that my great grandmother taught her how to make it over a peat fire in a thatched cottage. I’ve made it in restaurants I’ve worked at and that’s the story I’d tell,if asked,why it was called Pearl Leggetts potato soup.

I usually add the peas and carrots to my "cottage pie". Two reasons ... one to bulk it out and two to save me cooking extra veggies as a side.

That looks delicious,funny thing is in my 59 years in the US I have never made any of these similar pies,I have occasionally eaten one at an Irish friend’s home.The only thing I ever do with mince is make chili,hamburgers,keema,or meatloaf,never think to make these mash potato type pies.I too like mash that’s a bit lumpy,when I see potato purée on a menu,I ask for a substitute 😊

I'm confused Rik! When I make a cottage pie I put panko and Nutritional yeast (I'm B12 deficient) on top and still call it a Cottage Pie.... When you said Cumberland ( or Cumbria where my Grandfather was born) I think sausage - not minced meat? Looks delicious either way but I know if I'm confuced others will be furious haha
