That’s cause the sugar fermented and it therefore was not sweet, the yeast basically „eats“ all the sugar and „product“ that comes out is alcohol so if you expect it to be sweet you have to artificially sweeten it or sweeten it while or best at the end of the process with sugar, that’s pretty much basic chemistry
If a wine has very little or no sugar, it is considered dry. If a wine has very little or no sugar and is bitter, it's a dry wine. If a wine is bitter and does have sugar, it can still be considered dry, but it can also be sweet, depending on the amount of residual sugar. Every unsweet wine is dry, but not every bitter wine is dry. Dry wine is defined by the lack of sugar, not by acidity or tannins. Lack of sugar alone can dictate that a wine is dry. Acidity and tannins do not determine if a wine is dry. In this case, he probably said dry because the fermentation stopped at 6%, meaning there's likely very little sugar left.

Rotten eggs are because of the H2S compound it's because of some amino acids they might be a little higher in soda or the specific amino acids like methionine and cysteine check and you might find them in the soda. That s why they add H2S to wine to protect these from turning into H2S
After 30 days all the sugar would have been used by the yeast hence why it was dry also sometimes you get a sulphur smell after it has been sat for along time
