    I tried your Tex Mex enchiladas last night and they were delicious! My family loved them! Looks like chicken and broccoli stir fry tonight! I wanted to also let everyone know that I ordered the the shaoxing wine from Amazon, if anyone was looking for it. Thanks so much for sharing your delicious recipes!

    The broccoli hack is a good one. This is called blanching. I learned it years ago from a bistro chef. I have your cookbook, and I absolutely love the content you create. Major props!

      Well, yes, it's all called blanching. The hack she was demonstrating was not cutting the broccoli up before blanching, but blanching the entire crown in one piece THEN cutting into florets

    try adding crushed garlic to a cornflour slurry and mix it in at the end - 8 years chinese chef :D its delicious i promise!

    The best substitute for Shaohsing Wine is a light sherry; they both have very similar flavours.

      Yup, that's what I use too. I've looked in my local grocery stores and can't find Shaohsing wine. I should order it on Amazon

    Thanks for sharing, it looks really good.
    The baking soda really makes the chicken very tender. Wondering if you thought the egg white made a difference or not.

      I think it creates a thin fried coating to keep the moisture in thus making it tender and juicy.

      The wine label says shaohsing, not shaoxing. I wonder if that makes a difference on the flavor.

    I use Sherry cooking wine as a substitute for the shaosing wine. It tastes really good.

    TY so much. I have younger kids so I blanch brocolli for a bit longer, also add more brocolli so they get veggies in there day. If I have to use canned chicken broth I dump any extra as liquid for my rice cooker.

    Hi from mexico you can substitue de wine with bourbon or dry sheery.

    If I don't have the Chinese wine, I use marsala which I usually have on hand. As far as par boiling goes, I do a version of that. I pour 208 F water from a dispenser on what I am par boiling, leave it a couple of minutes then repeat. I do that for the meat I am stir frying as well although the chicken is only in four or five ounce portions and cut in smaller pieces. There is a You Tuber who rarely marinates just par boils in wok on his four burner wok station. I find the meat as tender and juicy as marinating. My method of par boiling requires the chicken spending at least three minutes in the hot wok. Love and watch all your videos.

    Your rendition of Chicken & Broccoli looks scrumptious! Great tips for making the sauce, as well as showcasing the process of "Velvetting" the Chicken prior to cooking. Doing so really makes the difference, and gives the taste like that from a proper Chinese restaurant. Proper techniques yield great results! Love the pan also, might have to stop by the local H-Mart store to check their selection of pans/woks.

      Try Sherry or Mirin, Don't know where you live but I'm in Az. USA, I go to Fry's or the Asian grocery about 20 minutes from here in Mesa.

      If you have Chinese grocery stores around, they’ll definitely have this. The local grocery stores may have it if your area has chain grocery stores. If you can’t find it locally, you can order it from Amazon.
      As she stated in this video, this is a key ingredient to a lot of Chinese dishes. This cooking wine is very flavorful and you’ll lose that authentic Chinese taste if you try to substitute with some other wine or omit it altogether. 😉

    Dry Sherry is a good replacement for Chinese cooking wine. I’m allergic to wheat, and for some reason there is wheat in Chinese wine?🤷‍♀️

    A good substitution for Shaoxing cooking wine, if you are alcohol free or just don't have it is apple juice - not quite the same but it will give the light fruity notes!
