I am Mexican nothing wrong with white, brown, black just want the ethnicity to match the food makes me feel better about the food like great grand ma taught them. Maybe I am wrong just makes me feel better about the recipe.

    • @fishsaucemama
      @fishsaucemama  ปีที่แล้ว

      Usually ribeye is pretty tender already. Some trick you can do for other cuts is to try add a little baking soda like 1/4-1/2 tsp to tenderize like Chinese cuisine. I usually eat very quickly while it's hot and tender so no leftover. This also avoid it harden and reheat.

    • @fishsaucemama

      Nice. If you like harder rice, try to cook a little on the dry side. When you fry extra juices will help plump up a little and not over smushy.

    • @calilotterywinner
      @calilotterywinner ปีที่แล้ว

      The dry side?

      Like if the steam rice instruction asks for 1 cup of water, I'd use a little less maybe 3/4 to 4/5 c. Cut back a little water when steam if you plan on using it for fry. When I was working at the restaurant there was separate rice was cooked for employees who wanted steam rice. They steamed rice for frying a little drier.

    I've been in the market for some good, quality wok. How's the wok you have working for you? Is it a lot of work to season it? And what brand is it? Thanks😊

    • @fishsaucemama
      @fishsaucemama  4 ปีที่แล้ว +5

      Hi Sherry. I got this wok at an Asian store in the restaurantsupply section. I love this one. It's quite large and make out of steel. I like it a lot. It doesn't have any brand. I think I got it for $17 bucks a few years a go. The wall is thin.
      It's steel, so when I am done washing it, I have to heat it up to dry to prevent rust. After it's hot. I just add like a tablespoon or 2 of oil and wipe real quick on the inside and outside rim. It doesn't stick much in my opinion and very easy to clean.
      Only one problem for me is I need a large space to store it 😆.
