    Baklava Fans
    Servings - 4
    INGREDIENTS
    Water - 300 milliliters
    Sugar - 80 grams
    Lemon juice - 1 teaspoon
    Spring roll sheets - 4
    Milk - for brushing
    Melted butter - for brushing
    Soaked pistachios - 40 grams
    Water - 35 milliliters
    Organic food color - 1/4 teaspoon
    Pistachios - for garnishing
    PREPARATION
    1. Take a pan, add 300 milliliters water, 80 grams sugar and stir continuously until the sugar is dissolved completely.
    2. Add 1 teaspoon lemon juice and cook for 1 minute. Remove it from heat.
    3. On a board, place spring roll sheet and brush it with milk.
    4. Now, fold it and shape it into a fan. (See video)
    5. Prick a toothpick in it and place it on a baking tray.
    6. Now, brush it with melted butter and preheat the oven to 350°F/180°C. Bake for about 10 - 12 minutes.
    7. In a bowl, add prepared sugar syrup and dip prepared fan in it.
    8. Place it on a rack and rest for 5 minutes.
    9. In a blender, add 40 grams soaked pistachios, 35 milliliters water, 1/4 teaspoon organic food color and blend it well.
    10. Transfer, this into a bowl, dip prepared fan in it and coat it with pistachios.
    11. Serve.
    Gulab Jamun Pudding
    Servings - 6
    INGREDIENTS
    Sugar - 200 grams
    Water - 650 milliliters
    Crushed green cardamom - 2 pods
    Saffron strands - 1/4 teaspoon
    Whipping cream powder - 100 grams
    Chilled milk - 150 milliliters
    Fresh cream - 2 tablespoons
    Condensed milk - 2 tablespoons
    Vanilla essence - 1/4 teaspoon
    Rusk - 6
    Milk powder - 130 grams
    All purpose flour - 50 grams
    Baking powder - 1/4 teaspoon
    Milk - 50 milliliters
    Melted butter - 1 tablespoon
    Oil - for fry
    Pistachios - for garnishing
    Dry rose petals - for garnishing
    PREPARATION
    1. Take a pan, add 200 grams sugar, 650 milliliters water and stir continuously until the sugar is dissolved completely.
    2. Add 2 pods crushed green pods, 1/4 teaspoon saffron strands and boil for 2 minutes. Remove it from heat.
    3. In a bowl, add 100 grams whipping cream powder, 150 milliliters chilled milk and whisk it well with the help of whisker.
    4. Add 2 tablespoons fresh cream, 2 tablespoons condensed milk, 1/ teaspoon vanilla essence and whisk it well with the help of whisker.
    5. In a dish, add 6 rusk, some sugar syrup, prepared cream and spread it evenly. Freeze for 1 hour.
    6. In a bowl, add 130 grams milk powder, 50 grams all purpose flour, 1/4 teaspoon baking powder, 50 milliliters milk and mix it well.
    7. Add 1 tablespoon melted butter and knead it into a dough.
    8. Take some mixture in your hands and shape it into a ball.
    9. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
    10. Remove it from heat and drain it on an absorbent paper.
    11. Transfer, this into a sugar syrup and soak for 1 hour.
    12. Place it on a board and cut it into half.
    13. Place it on prepared cream layer, add some pistachios and dry rose petals. Freeze for 30 - 40 minutes.
    14. Now, cut it into pieces.
    15. Serve.
    Jim Jam Biscuits
    Servings - 4
    INGREDIENTS
    All purpose flour - 250 grams
    Butter - 110 grams
    Condensed milk - 150 grams
    Milk - 60 milliliters
    Icing sugar - 120 grams
    Butter - 40 grams
    Milk - 2 tablespoons
    Fruit jam - for garnishing
    Sugar - for garnishing
    PREPARATION
    1. Take a bowl, add 250 grams all purpose flour, 110 grams butter and mix it well.
    2. Add 150 grams condensed milk and mix it well.
    3. Add 60 milliliters milk and knead it into a dough.
    4. Cover it with cling warp and refrigerate for 30 minutes.
    5. Take a ball form prepared dough and make it flatten with the help of rolling pin.
    6. Now, cut it into round shape with the help of moulder. (See video)
    7. Now, make a pattern with the help of knife. (See video)
    8. Place it on a baking tray and preheat the oven to 350°F/180°C. Bake for about 10 - 12 minutes.
    9. In a bowl, add 120 grams icing sugar, 40 grams butter, 2 tablespoons milk and whisk it well with the help of whisker. Refrigerate for 15 minutes.
    10. On a board, place biscuit, add prepared cream filling on it and cover it with another biscuit.
    11. Garnish with fruit jam and sugar.
    12. Serve.
    Sitafal Kunafa Pudding
    Servings - 4
    INGREDIENTS 
Custard powder - 20 grams
    Milk - 200 milliliters
    Butter - 1 tablespoon
    Vermicelli - 120 grams
    Pistachios - 2 tablespoons
    Condensed milk - 20 grams
    Milk - 600 milliliters
    Condensed milk - 80 grams
    Custard apple pulp - 200 grams
    Pistachios - for garnishing
    PREPARATION
    1. In a bowl, add 20 grams custard powder, 200 milliliters milk and mix it well.
    2. Heat 1 tablespoon butter in a pan, add 120 grams vermicelli and roast for 2 - 3 minutes.
    3. Add 2 tablespoons pistachios, 20 grams condensed milk and cook for 3 - 4 minutes. Remove it from heat.
    4. Take a heavy skillet, add 600 milliliters milk and bring it to a boil.
    5. Add 80 grams condensed milk and cook for 4 - 5 minutes.
    6. Add prepared custard milk and cook for 5 - 6 minutes.
    7. Remove it from heat and cool for 10 - 15 minutes.
    8. In a blender, add 200 grams custard apple pulp and blend it well.
    9. In a bowl, add prepared custard mix, blended mixture and mix it well. Refrigerate for 3 - 4 hours.
    10. In a serving glass, add roasted vermicelli, prepared sitafal pudding, again some roasted vermicelli and garnish with pistachios.
    11. Serve.
