Karst comes from the German word der Karst, which comes from the Slovene word kras. It does not originate from Croatia and the word does have a vowel. There's no language in the world that has words that don't contain vowels, nor was there ever a language in history that had words that didn't contain vowels.
To be honest, I don't think anyone knows for sure how caves are formed. I've sent many, many hours in caves and once knew a lot of geologists and cavers and I don't think there is a definite consensus.
