Recipe Notes For Making The Best Roasted Garlic Soup:
- This creamy garlic soup recipe calls for three heads of garlic-not cloves, heads. While fresh, raw garlic packs a seriously sharp punch, roasted garlic is a different flavour entirely. Once roasted, fresh garlic cloves melt and become sweet, taking on a mellow, almost nutty flavour.
- Even using 3 heads of garlic, this soup is only mildly garlicky. If you want a strong garlic flavour, use 4 or even 5 roasted garlic heads. You can add a few cloves to the pot along with the potatoes as well if preferred.
- For a dairy free version of this garlic soup, try using full fat coconut milk in place of the cream and use margarine in place of the butter.
- Feel free to add cheese to this soup. I'd recommend adding Parmesan of mozzarella.
- Chicken broth can be used in place of the vegetable broth if preferred.
