Sweetie scoop the oil and put it in your fridhe and use it to make your k3 garri and also useful for garri fortor. I recycle my oil all the time from my teens and i'm in my 60s.
In Ghana we cook a lot of stews with lotta oil then scoop it off later to save for other things. Such as frying egg, other meals, the flavored oil adds a new flavor to the other meals we make it's so so good.

Use a filter or splatter guard
It has holes to it.
First boil it until there is less water and then it will splatter less when adding oil.
