    When I can't come up with something for a meal I do an internet search for "recipes using" and list the ingredients I hope to use up. So many possibilities that someone else has tried will usually come up.
    Or, I go back to the "day of the week" menu. A little boring but not much thought required. Like pot roast on Sunday, spaghetti on Monday, fried chicken on Wednesday, take out on Friday. Saturday we picnicked at the beach.

      I love the idea of searching for possibilities with miscellaneous ingredients. I never thought to do that.

    Sounds good! I saw peas and carrots and you have rice and chicken....maybe chicken stir fry. Its good with cabbage in it too. Just saw a recipe on TH-cam today. I'm doing it tomorrow!

    Hi Lynn have a question what do you make out of the beef or pork thats in a can that you get from food banks

      Well I’ve only used one of the cans and I use the beef and made tacos from it. They are all gifted to me from a friend who doesn’t want them and I can’t see throwing them out. So I haven’t use them on a regular basis yet.

    Great video Lynn. I'm like you when it comes to meal planning, I don't like it either, it annoys and aggravates me. Like you said, we have to eat and because food is so expensive now, planning ahead is a way to go. I also make at least two hearty meals a week and spread them over a few days. I find this is so much simpler than making something different every night.

      Well I’ve started to cook the food and prepped meals and I hope to have a quick video in a week or so showing some of the things that ended up making.

    Good plan Lynn !! I cleaned out my pantry today and added items from the stockpile. I found about 6,000 paper and plastic bags stuffed into that pantry ! OMG ! Now they are all folded and in a box. You'd be proud of me. Lol

    It sounds like a yummy week at the Wilson house😀. My meal plans are currently driven by “best by dates” in my pantry. Have you seen the TV show “Chopped”? LOL!

    We make 2 ingredient bagels plain greek yogurt self rising flour. Yum

    I watched your other video earlier today about your fridge and the possibilities of making meals from what's on hand. I thought of you as I diligently sought after a recipe to use up my pork roast in a different way. My meal wound up being Pork Carnitas Enchiladas with green sauce. Let me tell you it was delicious. This roast fed us for 4 days. Thrilled!!!

    When I used to make enchiladas, I would lay the corn tortillas flat, and add beans to the ground beef to stretch it. It weighed a ton and would last forever.

      Thanks so much… I am blessed to have a network of people that we share food and when someone doesn’t like or want some of the items that they have purchased indoor received we share it with each other. I have a good amount in there that came from others that have blessed me.

    Don’t you love it. When your own advice works!! A meal I used to make all the time was to cut kielbasa in small bites, a green pepper , large diced and an onion, large dice. Cook them together in some olive oil and butter. Cook small shells or pasta of choice. Mix meat and veggies into the cooked pasta and serve. It’s an easy, yummy meal, and there’s usually leftovers.

    Another option that may have or may have not been mentioned is to make double/triple the recipe and freeze for future meals..I have bought in bulk on sale meat and took a day to make up a bunch of different meals..so say I bought chicken I would make chicken parmigiana, breaded chicken, chicken Marsala, grind up chicken meat, add seasonings , shape into a patties and flash freeze on cookie sheet which is what I do with most meats unless it’s chicken parm that I already put together..I cook/bake it all , let cool , freeze on cookie sheet then put into freezer bags or Foodsaver…Hamburger use to be my favorite freezer meals I would make/bake meatballs, swedish meatballs, taco meat, lasagna, Salisbury steak, meatloaf, layered peppers which is basically like stuffed peppers but layering it instead..I always precooked before freezing…It was alot of labor but your hubby could help you right? I was always doing everything alone , my kids were in school, my husband worked..I did this on my days off ..loved the convenience of it..I have sinced learned that you can make freezer pizzas , never thought of that as back then we bought take out pizza as I had no id4a how to even make homemade pizza back then..this was years before I got into using my pressure canner..I use to even make bread pudding, bake and freeze into quart size freezer containers to always have a ready made dessert just had to take it out put the container in some cold water to thaw..I also use to pick strawberries at the u-pick farm up the road..I would slice them, out sugar in and put into a freezer container..made up sweetened biscuits, baked , cooled and flash freeze them and into a freezer bag for whenever I wanted strawberry shortcake for desert..Scones and fruit breads freeze well also..Another dessert option is homemade ice cream without a ice cream maker..and frozen yogurt without a ice cream maker..my husband loves and still does my koolaid sherbet..it’s a packet of koolaid your choice in flavor, sugar and milk you mix put into a round cake with pan, freeze for a hour, take out and put into a bowl , mix it and out back into the pie pan , cover and freeze..it’s a excellent cold, refreshing and cheap desert in the summer time..I’m your age now, my kids are grown and left the nest but I still do freezer meals, freezer deserts and lots of homecanned meat or meat in a jar where just need to make sides..I hope some of this gave you ideas on how to plan ahead with a heat n eat instant meals..also make and bake rolls, flash freeze and out into a freezer bag..

    Always said yay to meal planning! ( as you know) The bigger meals doubled helps so much IMHO. Today more than ever its so helpful!

    I just remembered Lynn. Have you ever put a couple of heaping tsps. of cottage cheese in your scrambled eggs... yum. Just beat it in there as you scramble them in your bowl with a bit of salt & pepper. Nice change and a chance to use up a dab of left over cottage cheese.
    That is enough for 2 eggs.
