My mom used to make them too. It's my brother's favorite, & I love them myself, but I haven't made any for him since she passed away almost 9 years ago. I try to make things that mom made every year for Thanksgiving & Christmas.
My haystacks you melt 1/2 cup to cup of crunchy peanut butter with a bag of butterscotch together on very low stir a lot then add the noodles. Savor every moment you get with your Mom. Everything ya'll made looks yummy.
My friend does the Ritz crackers with rolos, but then dips them in semi sweet chocolate and sprinkles sea salt on top....because she's extra that way. Seriously one of my favorites during the holiday!
I baked on Sunday and Monday. I made Chocolate Crinkle Cookies and Old Fashioned Sugar Cookies. I kept a few for myself and the rest I am giving to friends and neighbors along with a bottle of wine. I can’t wait to make those bars that your mom made, I call them Magic Cookie Bars!
The bars your mom made are my favorite that my mom made. She put dried red and green maraschino cherries on top at Christmas time. I don’t make them but there is a bakery here that makes them and I treat myself to a couple pieces.

The Ritz Rolos look good. If you wanted to make them look ‘Christmasy’, you could add red or green food coloring to white chocolate morsels, melted, and dip half of the cookie in the mixture! Merry Christmas!

How about this; 1 rolo on a little square pretzel...into oven to soften....remove, press pecan halve gently on top....I am going to use roasted and salted pecans ,,,,oh my yummers...hugs...patti
I make the Rolos, pretzels with the pecans every Christmas. They're delicious. If I were to make the Ritz and Rolo candy, I would dip them in melted chocolate then, and put Christmas sprinkles on top.
I use Nilla Wafers by placing the wafer top down and placing the Rollo in the center, place it in the warm oven for 3-5 minutes until the Rollo is just melted. Then I take a second wafer and sandwich the Rollo in between. Closest I've come to a homemade Twix bar. And of course you can cover the whole thing in chocolate. 😊

My daughter and I make these the sweet & salty is just right... Preheat oven to 250 degrees Spread out pretzels individually on cookie sheet and top with one Rolo on each pretzel. Bake for 5 minutes Squish down Rolo with another pretzel to make a sandwich Enjoy! *we are going to try your Ritz though they sound delicious.
We call those bars “magic bars”. Ugh they’re so good. I like making those rolo things with pretzels. You can put red and green mms on top to make them more festive 😊

These will be great to make with grandkids. l just want to give you another idea for the "haystacks"--l make these at Easter and turn them into bird nests. (add peanut M&Ms for eggs in the nest). I also add peanut butter to the butterscotch and a small amount of choc. chips for color. They are so popular and yummy.
