Typically you do that just to make one more frametrap; one more choice where they have to decide either to challenge you and risk getting blown up on CH, or keep blocking and potentially let you reset the pressure. If you went straight to 5H/2H/2D, youd let go of the offense pretty quickly and not give yourself much flexibility. Of the remaining options, 2S is just a bit better suited to this kind of pressure than 5S or 6P.
If you're confused about the start, you need to do a high jump (down then jump) to get that combo. Also, I found that sometimes 2K doesn't work (might depend on timing) so I use 5K

As Nago is falling down he tagged him with the c.S, which is usually the Ladder starter, with a buffered jump into Youzansen. That clip I had tagged previously above just started without the c.S, but it's similar. He actually mentions it again at 7:14 too.
No problem. If you want to learn how to do the Ladder, look up a video on it, as it's an advanced combo with very specific techniques required to get it working. Takes a lot of practice just to even get it to work at first, and then more practice to land it all the time.

My only guess is that parry cancels the recovery of the 6H so he’s able to super right after instead of waiting for the 6H to recover in time.

Look at Fast RCs in the mission mode. Input a move shortly after the RC starts to cancel the RC animation.
It can also be done with normal moves and other inputs, not just specials.
